It's 3:30 in the am and I'm having another sleepless night. As I sit here, I am nibbling on some Gouda and some Jarlsburg. Then, a revelation....Cheese is really delicious!
I felt the need to share this "moment of clarity".
Cheese eaters, what do you think?

i am so with you on the cheese thing, and the still awake thing. but you should try living above a deli that opens at 6am and cope with the smell of bacon wafting into your bedroom when you're hungry.

AMB, you really should reconsider cheese. Start off with something mellow..like white american and eventually you will find yourself scarfing down some really sharp cheddar!;)

Cheesesteaks are great! What was cool about Pat's (the one place in Philly) is that it has this sort of Seinfeld Soup Nazi-esque quality, in that you had to order a specific way...either that or my friends were just playing a joke on me. You had to order by saying, "I'd like one cheese with" which meant, one cheesesteak with cheese wiz melted cheese...mmm they were so good and not too expensive! :)

Yummy cheeeesssse...my favs are Monterey Jack, the yummy baby red cheese, fondue cheese with yummy french bread, Portuguese cheese, cheddar, cheese is always better with crackers. I even love that processed stuff that comes in those handi-snacks. The only cheese that I find absolutely repulsive is cottage cheese.

Cheez Whiz is the bastard child of the cheese family because it's sort of that adopted cousin Oliver, where you thing it's related, but not entirely sure. Heck, even Velveeta ranks higher as a myriad of questionable cheeses.

I like the best part of the pizza without the pizza. Pollyo string cheese. I am with The heckler on this one cheese is great. It also helps ease all your gas clots. :)

Kate don't mind my stupidity, but what are cheese curds? It doesn't sound appealing. The only time I've heard of curds is in that nursery rhyme. When I think of curds I think of cottage cheese which makes me think of yeast infections. Please clear this matter of curds up for me...thanks. :)

Don't worry about it, EMB... nobody here knows what they are. :) They are definitely a midwest thing. My fianc thought I was making them up. It's kind of the same thing as with the curds in cottage cheese, but not exactly. Before any kind of cheese is made, it's basically milk with a lot of butterfat(cream) in it... then they put in a souring agent that makes it curdle... like with cottage cheese. The butterfat solidifies and floats to the top... that's what make cheese. Cheese curds are what results from that first solidification, before they put the different bacteria in to make the different kind of cheese. The curds are bigger than in cottage cheese, more nugget sized... they're taken out and salted. Mostly they taste like really mild cheddar, in my opinion. And the really fresh ones squeak... that's how you know they're good. In Wisconsin, we sometimes batter them and deep fry them, kind of like mozerella sticks. I know, the clinical explanation doesn't sound very good, but beleive me, if you like cheese, you'd love cheese curds.

*G* Does it show that I grew up in Wisconsin, doing farm work in the summer, and that my father hauled milk to the creameries? Nope, I don't know anything about cheesemaking, nuh-uh, not me, nope nope nope.
Next time I get cheese curds from home, I should send you some so you can try them. :) But then I'd have to share with the rest of the class, or I'd get in trouble with teacher.

Yes, yes, and uh... kind of. :) I once attempted to make cheese in one of my agriculture vocation classes. I made yogurt instead. My milk didn't contain enough butterfat. So technically, I have the know how... just not the experience. Yet.

Cheese is not good for a dog because it is high in chlorestorol, and builds fat around the arteries of the heart. (as in humans)can cause diareaha and make your dog an unhealthy fat animal.Cheese causes problems over a period of time,and eventually the animal could suffer from strokes, or become overweight.Also, humans digest cheese in their mouth first, dogs digest cheese and any other food in their stomach first. Can cheese kill a dog, no. Cheese causes problems that leads to their death.Did you know? If the dog is overweight, it's heart pumps the blood twice as fast to digest their food. Anyway, anything (cheese) givin once in a while wouln't really hurt a dog or cat.
P.S. I work with animals;)

I had an argument with a friend of mine about yellow vs. white cheeses, specifically Yellow American vs. White American (no, not japs vs. crackers, I'm talkin cheese)
I'm one to say that yellow cheeses beat white cheeses hands down, but Yellow American Cheese beats White American Cheese.

Don't forget the Italian influence in cheese, not only Mozzerella, but prevelone, parmasan and ricotta. If you go to a carribean island and eat at a Pizza Hut, if you don't specify mozzerella, they slop goat cheese on it.
I heard the Taliban turn their turbans upside down and fill it with cheese dip for dunking camel chips.

I'm glad that you brought up the cheese issue. I for one love cheese, but NOT anything that pretends to be cheese like ANY KRAFT PRODUCT, with the exception of Cheez Whiz, the "Cheez God of Slime" which goes miraculously well on burritos and cheese burgers. Here, let me list the ingredients of your average Kraft cheese product:
Cheez Whiz ingredients:
WATER, partially hydrogenated pig-ass oil, snot, chemicals that resemble cheese, salt, salt, and more salt, shit, piss, hangnails, callouses, railroad track leavins, fetid pools of waste, Al Dukes' thigh scrapings, mayonnaise, gelatinous cellulite, and pus. Contains .000000001% of cheese by-products.
What could be better than THAT!?
Also, my recipe for strange and disturbing dreams is to eat this before bedtime: lumps and chunks of any stinky cheese, SOUR garlic pickles, chocolate pudding, green olives with pimientos, more cheese, and a cracker. This will surely make you toss & turn all night long, causing you to wake up in a cold sweat screaming "NOOOOOO!!!!! GET OFFF MEEEEE!!!". Fortunately, you probably won't remember the dream, but your next thought will certainly be "I shouldn'ta had that CHEESE last night before bed." You will unfairly blame the cheese, no doubt.

I like monteray jack with jalapeno peppers, sharp cheddar, gouda (smoked and non smoked), provolone, fresh mozzerella, alpine lace swiss, and recently have been on this kick of this cheese from Cabot with horseradish and cedar..its awesome, it clears your head up!

I had jalapeno jack cheese a few months ago and it was great.
I love cheddar, munster, gouda, swiss, mozzerella, american, etc. It's all good.
Add some wrapped bacon or pepperoni to the mix!

Fortunately, I live just minutes away from a cheese factory (cheese factory, in Wisconsin? get outta here!), so I get some really prime stuff cheap.

There is a new cheese invention in my life. It has really turned things around for me.
Its cracker barrel chedder cheese. i know what you are thinking, who has not had this before.
BUT WAIT!! there is a new one that is pre-sliced into perfect saltine size pieces. I forget the name but it is in a green package.
I love cheese but hate trying to cut it into perfectly uniform squares. this has solved my problem.
