I am not religious, but I hate having to say Happy Holidays. And being that I work in retail in a largely Jewish neighborhood, I am stuck saying it. How does everyone else feel about it?

I used to say merry christmas, then I started working retail so I started saying happy holidays, and now I say both. Not at the same time, but it's interchangeable.
I chose the last option though because I am bored with this planet.

Always say Merry Christmas...
Also always say "Happy long Jewish holiday"
Also always say "Happy ripping off long Jewish holiday"
I like to make people feel good...

I don't say anything because I don't care.

This. I celebrate Christmas, but not as a religious holiday, so neither bothers me. I have some friends on FB who are all in a lather because people will say "holidays" over "Christmas." I don't care one way or another.

Ask those friends how they feel about wishing a Jew or a Muslim "Merry Christmas".

Why do you feel compelled to bring up the next upcoming holiday? What's wrong with just "have a good day"?
I never "wish" anything for anyone. And if anyone "wishes" something for me, at best, they'll get a "thank you", or maybe a "same to you", or if it's someone I know, they'll sometimes get a "no, I don't have to".

if there were no Christmas
there would be no "holiday season"
of course it is "Merry Christmas"...
Mexicans prefer that too, so anyone
who says "happy holidays" is racist
Why should I care? Both statements are friendly and usually spoken with the best of intentions.

but it's the person receiving the statement that sometimes causes an issue with the statement

I say Merry Christmas to people I know, but I can understand department stores and what not saying Happy Holidays. I know I'm not offending the people I talk to, no way for a checkout person or a greeter to know. I'd say offending somebody elses religious ideals goes against the spirit of the season.

I celebrated it last year. I had a blast. Not even joking around. It was a fun time.

I've never met a Jew who was offended by Christmas...most of the ones I know actually celebrate Christmas because they think the Jewish holidays are kinda lame.
It's always the Liberals who are offended by Christmas for whatever reason.
As an Atheist I just don't care, but it is nice to get presents.

Sure there would: there would be Hannukah, Kwanzaa and Festivus: with the occasional Tet and 'Id thrown in for good measure.
And the Mexicans prefer this to "Merry Christmas":
