I could take this opportunity to mention that the lobster sandwich is back for the summer at Panera, but I won't for fear of bringing Snoogan's wrath down upon me.

Well this was a waste of time.
At least I found a kickass recipe for a salad:
Ingredients
-romain lettuce
-2 tomatoes
-1 peeled shreadded carrot
-Half a cucumber chopped
-Viniger
-salt
-Pepper
-oil
How to make it
1. In a salad spinner, add washed romain lettuce and spin in the salad spinner untuil the salad is dry.
2. Once salad is dry, put in a big bowl along with other vegtables.
3. In a small container, add vineger, oil, salt, and pepper
4. Add the viniger onto the salad when ready to serve.
Now I can make a salad. Before, I wasn't sure how the lettuce and vegetables got into the bowl, then covered with the dressing.

I never was a fan of Panera but my girlfriend loved that place so I had it a few times and thought it was nothing special. I do however want to try their new steak sandwich that they have been advertising. If I dont like it that will be the last time I ever step foot in a Panera!

Too much stuff
Ingredients
4 New England-style hot dog buns
4 tablespoons unsalted butter, softened
1 recipe Lobster Salad (recipe follows)
4 Boston or bibb lettuce leaves, washed and dried
4 dill pickle spears
Potato chips
Lobster Salad
1 pound fully cooked lobster meat or 5 pounds live lobsters
1/2 cup Special Mayonnaise for Lobster or Hellman
2 or 3 small scallions (white and green parts), thinly sliced
Kosher or sea salt
Freshly ground black pepper
Preparation
To make the Lobster Salad
1. If you are using live lobsters, steam them until fully cooked and then cool to room temperature. Use a cleaver to crack and remove the meat from the claws, knuckles and tails. Remove the cartilage from the claws and the intestine from the tails of the cooked meat. Cut the meat into 1/2-inch to 3/4-inch dice. You may pick all the meat from the carcass and add it to the meat, or freeze the carcass for soup or broth.
2. Place the cucumber in a colander for at least 5 minutes to drain the excess liquid.
3. Combine the lobster, cucumber and mayonnaise. If the salad is to be served within the hour, add the scallions. Season with a bit more pepper if needed; it is unlikely that salt will be needed. Cover with plastic wrap and chill for at least 30 minutes before serving.
To make the Lobster Roll
1. Heat a 10-inch skillet over medium heat. Spread each of the hot dog buns with 1 tablespoon butter (1/2 on each side). Place the buttered buns into the hot dry pan and toast without moving, until golden brown on one side, about a minute. Turn and cook the other side, about 1 minute more. Remove from heat.
2. Open the buns and place in a paper bun holder or on a small plate. Place a lettuce leaf on one side of the center, inside the bun. Spoon the lobster salad evenly among them. Serve with pickles, and potato chips on the side.

Active Time: 25 Minutes
Total Time: 3 Hours 55 Minutes
Yield: Makes 1 dozen sliced buns
Rich in eggs and butter, this dough is soft and tender and does not require excessive kneading. It is easy to make by hand and even easier if you have an electric mixer with a dough hook.
RECIPE INGREDIENTS 1 teaspoon active dry yeast
1 teaspoon granulated sugar
1/2 cup warm water
1 teaspoon salt
4 cups all-purpose flour, sifted after measuring, plus additional for dusting
3 large eggs
1/2 cup warm milk
4 tablespoons unsalted butter
2 tablespoon salad oil
2 tablespoons water
Other necessary recipes:
The World-Famous Maine Lobster Roll
DIRECTIONS Combine the yeast and sugar with 1/4 cup of the warm water in a large bowl or in the bowl of an electric mixer. Let stand for 5 to 10 minutes until the mixture becomes frothy. (This allows the yeast to "bloom.")
Add the salt and flour. Lightly beat 2 of the eggs with the milk and add this mixture to the bowl. Melt 3 tablespoons of the butter and add this as well. Have the remaining 1/4 cup warm water ready. If you are mixing by hand, add some of the water and begin to mix, adding the water as needed. If using an electric mixer, attach the dough hook and jog the machine (turn it on and off) until the dough begins to form. This prevents the flour from jumping out of the mixing bowl. Add the remaining warm water as needed; the dough usually takes the full amount. When a soft dough has formed, knead for 5 minutes by machine or about 8 minutes by hand. This is a soft bread and does not require as much kneading as chewier types The finished dough should be soft but dense and should not be sticky.
Shape the dough into a ball and lightly oil it with the salad oil. Place it in a large bowl. Cover with plastic wrap or a slightly damp towel and let rise in a warm place for about 1 hour until doubled in bulk.
Punch the dough down and move to a work surface. Lightly dust the work surface with flour. Shape the dough into a square. Using a knife, cut the dough into 13 equal pieces. This is best done by cutting 12 pieces and using scraps to make the thirteenth. If there is not enough dough for the thirteenth piece steal a little pinch off the others.
With the remaining 1 tablespoon butter, lightly grease a baking sheet that is at least 15 inches long. Shape the dough into uniform 7-inch-long tubular pieces. It is important that all the pieces be the same length. Place the tube in a line, side by side, down the center of the baking sheet, leaving a 1/2-inch gap between them. Put the pan in a warm place and let rise a second time.
Prepare a thick egg wash by mixing the remaining egg with 2 tablespoons water. After 15 to 20 minutes, the tubes of dough will have risen enough that they will be touching. Generously brush the tubes with egg wash, return the pan to the warm spot and let the dough rise until almost doubled in size, 10 to 15 minutes.
Preheat the oven to 350 degrees F. Place the buns in the oven and bake for about 30 minutes until deep golden brown.
Let the buns cool on the baking sheet for at least 15 minutes, then run a spatula under them to make sure they are not sticking to the pan. Using 1 or 2 spatulas, carefully lift the baked dough in one piece onto a rack to cool. It is crucial that you not let the buns break or tear apart. After an hour, when the baked dough is completely cooled, move it in one piece to a cutting board. Using a serrated knife, slice down the center of each tube. You will lose half a tube on each end (which is why you need 13 tubes to make 12 buns). The place where the tubes met is now the center of each bun. They will open naturally when it comes time to stuff them, but you can make a small incision to ensure that this happens.
Wrap the buns in plastic wrap until ready to use. If you do not intend to use all 12 buns, freeze the extras and defrost when needed.
COOK'S NOTE: To infuse the dough with the delicate flavor of saffron, chop 1 teaspoon saffron threads and add to 1/4 cup water in a small pan. Brinmg the mixture to a boil over medium-high heat, then remove from the heat. Let cool to lukewarm and substitute for the 1/4 cup water added for mixing. Since the dough will be golden to start with, look for a dark brown top before removing from the oven.

Fuck the bun. Take a nice thick piece of Texas toast, get it lightly toasted, and lightly butter it. Then butter the hell out of the lobster once you've added it to the bread. So what if you have to eat it with a fork?

i'll take legal seafood over a shithole place like red lobster any time.
THIS PLACE (http://www.lobsterroll.com/lobSouth/local_index.html) makes a mean lobster roll. i just hate driving out there
they apparently have another location near calverton.

I haven't read through this thread, but I thought about it when I saw a friend's Facebook status today...
what could pull me away from my blissful porch? lobster rolls at the Brooklyn flea of course
Hope that helps.
