A friend gave me some squash and zucchini. They are HUGE! Since they are so large, I plan on cutting them up and freezing them. Does anyone here have any go to recipes they know for squash and zucchini? Or recipes for any home grown veggies for that matter...

Only an animal would eat zucchini. I does make good bread , however.
Zucchini Bread :
Ingredients
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts
Directions
1.Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
2.Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
3.Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
4.Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Seriously? I've always liked a mix of the two. I've just never made it myself.

i like most veggies, bu there is something about zucchini i never liked, like a bitter rubbery cucumber.

Are you sure it wasn't a dildo?
BTW... I once made the mistake of putting raw squash on a salad. Squash should NOT, under any circumstances, be eaten raw!

I grill squash with onions and red bell peppers then toss it with quinoa and some vinegrette.
Zuchinni bread is great, also good stewed with chicken or sausage. Brown your meat, take it out, throw in veggies, garlic, applicable seasonings- large can of crushed or tomato puree with equal parts stock, add meat back, simmer covered until meat is cooked, serve with rice.
If you're getting cucumbers I really like to make tzaziki sauce which goes really good on almost anything grilled. It's just yogurt, cucumber, lemon juice and dill if you have it.

the bigger the better isn't the case with zucchini and squash. not sure how well they will freeze either... both can make great casseroles. my wife made this dish last week and it was really good - http://online.wsj.com/article/SB10001424052748704103904575337383995847258.html

I've never heard of zucchini being bitter; that sounds like you were eating an overgrown cucumber and forgot to peel it.
Anyway, simplicity is best with those summer squash (zucchini included). You can slice them in 1/4' slices and grill them (marinate 'em first if you want), or take those 1/4-inch slices and quarter them and sautee in olive oil, salt pepper. As soon as they are almost tender enough to eat, add chopped garlic and herbs to the pan, sautee until these are fragrant, but not burnt. Then deglaze with a 1/4 cup of chicken stop/white wine mixture. Finish with some butter and parsley.
One thing about gigantic summer squash is that they should really be harvested before they get that big. The pith and seeds tend to take over the fruit, and you can end up with the textural equivalent of pumpkin guts after you cook them. But if you do have some big ones, cut them in half lengthwise, then cut the halves in half lengthwise, so you end up with squash "spears". Take a regular spoon and scrape away all that pith and seedy mumbo juumbo. Now you can slice up the quarters and you will end up with cute little crescents of squash for sauteeing. I actually do this to regular-size summer squash because it makes the dish look fancy (I learned it from a Thomas Keller cookbook).

I'm going to try this tonight. Question... Do you skin the zucchini before grating it? I've checked several recipes, and none of them say anything about it.
Edit: Never mind. I found out you don't.

i nuke up some bacon,toast some bread,take a leaf of lettuce and pick a tomato from my garden and throw on some mayo,its pretty damn good
