I'm going to a BBQ next week. The first pasta salad recipe is my usual. I apologize. I just throw pasta salad together with no measurements.
Petrina's veggie pasta salad
Tri-color rotini
chopped zucchini
chopped yellow pepper
grape tomatoes
red onion (light on this ingredient)
grated carrot
sliced black olives
sliced artichoke hearts.
I usually pull it together with an Italian dressing or a Caesar dressing.
I like this salad as do others. PLEASE critique!
The second pasta salad is somewhat new. I only made it once. My husband liked it (but he eats anything and doesn't want to hurt my feelings.)
plain rotini pasta
drained roasted red peppers, chopped
marinated and broiled portobello mushrooms (cooled), chopped
*(the marinade: olive oil, balsamic vinegar, worchestire sauce, lemon juice and garlic powder)
cut-up fresh mozzarella cheese
fresh basil
mixed with a balsamic vinagrette
I'd like to think I have this salad DOWN. I LOVE roasted red peppers, marinated port. mushrooms, and fresh basil.

I like Ranch Suddenly Salad w/ Bacon Bits.
So does everyone else in the universe.
Cup of milk, cup of mayo, boiled shitty noodles = delicioius.
Go that route and you will be the belle of the ball. :smoke:

I like the idea of the second one. But to be sure, make them both, send them to me, and I'll taste test them for you.

The first one sounds vile, but I think I'd at least take a scoop of the second.

whichever you choose, add a 1/2 pound of maple-glazed ham cold cuts from the deli. chop it up into little bits and mix it in with the salad and you'll be fine.

For me the second recipe is better by a mile. I might drop the grape tomatos into that too, because you already have basil, moz and balsamic so you might as well. I also like a lot of acid in what I eat and really need a lot when I'm eating moz. Plus you get that extra texture.

That sounds good to most, but don't add the ham. It's a party, adding ham alienates Jews, Muslims and vegetarians.
Both sound very good. If you're looking for a slam dunk, go with the one you've made many times and are satisfied with the way it's always turned out.

#2 slightly...........
I am partial since I HATE OLIVES and am not a fan of Tomatoes
but Mozzarella and Portobello Mushrooms trump the other ingredients
also you gotta roast your own peppers... its very easy and it makes a huge diffeence

Keep olives out of it, taste like salty armpit. Throw some raw red onion in #2.

Both salads sound good. I don't usually like zucchini, so I would favor #2.

#1, but throw in the fresh basil and mozzarella from #2.
You could always switch the dressings up, also.

Thanks for all the advice! I decided to just bring the veggie pasta salad. I had to take a day off with no pay and my husband was called off of work on Saturday. We're watching pennies; fresh mozzarella is pretty expensive (but SO yummy!!).
