I'm used to being single. If it's really hot out I eat chips and salsa or popsicles. You know the hot, humid weekend we had a couple of weeks ago? We ate raspberry sherbet. With one spoon.

I like pasta salads but mi esposo wants some sort of meat with dinner. I am not going to turn on the oven to make my apt hot. I do have a George Forman grill. I also know my supermarket sells rotisserie chicken; I can serve that cold with potato salad.

Any other ideas? He works a 12-hour shift so I already make him boring sandwiches. I need dinner ideas that will make good left overs.

Get one of those chickens and shred it to make tacos.

Cut it up up and toss in with whatever salad ingredients you both like(raw broccoli and cauliflower for me:happy:) - and you have to do them in the oven, but they should keep in an airtight container for a while - http://www.recipezaar.com/recipe/Garlic-Croutons-13889
I basically used this recipe, but added basil, parsley & oregano along with the oil and garilc and tossed it all in a big bowl to get the bread pieces nice and coated. They were delicious.

Wait until a cooler day and make a big ol' pot of homemade soup. You can freeze a bunch to have months from now.

Some pan seared fish will always do the trick for me. And it only takes a couple of minutes.

Never forget about breakfast for diner. Can only be done once in a while, but when it happens, it's fantastic.
