Shut IT!.
I usually brown the burger, then add beans and various seasonings and what not.
But it never seems to be the same as the carnival style beef.
Do they boil it? How do they cook it?
I dont understand. I cant get it the same way.

I do a bit before browning and a bit during for a nice crust usually when i cook them.

ok mexi......seems like your getting some funny....but not very helpful advice.....heres what ya do. ya get yourself some ground beef from the store....i prefer 80% lean cause anything higher looses its flavor. 80% lean means there is 20% fat...its a good ratio that isn't terrible for you and still give you some flavor. take it out of the package and put it into a mixing bowl......add your prefered seasonings....i like garlic salt, onion powder, one raw egg, taco seasoning (you can probably find this or something similar in the spice isle). mix all that up and put it in a cast iron skillet if you have one. while its cooking, you can add some worchester sauce, but definitely keep some water on hand......the meat can dry up as its cooking so as you're stirring adding a little water a time will help keep it moist.....this will also allow you to scrape up the seasonings and flavor that gets stuck to the pan as its cooking......getting that mixed back into the meat is going to ensure you've got a lot of flavor. don't pour in too much at a time....you don't want to get things too watery....it should be a small enough amount so that it will keep everything mixed together, but also evaporate as it cooks. keep it on a low to med flame....its going to cook fast so stay on it. use a wooden spoon to mix it up as its cooking.....this will break everything up and give you those little bits you're looking for to use in tacos. add salt to taste as it cooks and keep stirring till its all brown. turn the flame off and cover it up when you're done.

The carnival people don't use 100% beef, if you know what I'm saying.

Since you didn't listen the first time I'll reiterate.....braised!
Start with something like a skirt or flank steak, season it with salt and pepper. In a dutch over or a large pot that seals well brown all sides of the meat. Set aside. In the same pot fry 2 diced medium onions, 5 cloves of garlic, chilies of your choice and whatever spices you like (i.e. cumin). When the vegies are soft put the meat back in and add two cups of beef or chicken broth and bring to a boil. Cover the pot, transfer to a 350 deg overn and cook till fork tender (~3 hours). Flip the meat every 45 min and keep about 1" of broth in the pot. Remove, leave covered and after 30 min start pulling apart with a couple of forks or wait till its cool enough to do it by hand.
Ground beef is not the meat of choice.
