View Full Version : I am remedial at cooking at best; I need sure fire recipes

I recently started cooking regularly to save money. I love allrecipes.com but I am strictly hit and miss with a lot of those recipes. I need easy yet yummy recipes.
What I cook well:
Ziti (no meat)
Oven baked fried pork chops
rice and beans (black and red with various ingredients)
pork loin (pre-marinated with garlic and rosemary) with rice and beans
egg, mushroom and spinach frittata with home fries
Turkey meatloaf (which doubles as turkey burgers/meatballs)
I also make a great mango salsa which is great with fish or chicken, but it's a little pricey to make.
I eat meat although I am very vegetarian friendly. I have the side dishes down.
I would SO SO appreciate any tried and true recipes!!!

If you're looking for easier recipes that you don't need to shop at Zabar's to find the suggested ingredients I highly recommend Company's Coming. Most of her recipes would best be described as home cooking or comfort food. Again, nothing fancy all tasty.

My chick makes a French Toast Casserole thing that is EPIC. She also makes some great Hungarian dishes that are out of this world.

Lasagne is also a nice simple dish. I use the recipie on the back of the ronzoni box. My secret is I add mushrooms

is one of them chicken paprikash? omg, that was my grandma's specialty and it's amazing. we're croatian but got the recipe from a hungarian relative.
Also my famous Beef Stew recipie
2 cups water
1 12 oz bottle of Sam Adams Boston lager
1 packet of liptons beefy onion
4 onions quartered
2 lbs of stew beef
1 package of baby red or baby white potatoes quartered
flour for desired thickness
1 lb baby carrots
brown beef directly in a large cooking pot leave in pot
add water, and beefy onion mix and onions heat on medium just until it slightly boils
reduce heat to low add beer and desired amount of flower, cover
cook on low heat 2 hours stirring occasionally
after 2 hours add carrots and potato (And more flower if it's not thick enough)
cook for 1/2 hours to 45 minutes until veggies are tender stirring occasionally

Yup. I think her grandma makes that though. She makes this really nice dish with eggs and kielbasa that's amazing too.

Its this kind of casserole/loaf thing of french toast with an egg base that is amazing. It kinda looks like this:

Its almost like you take french toast, eggs, pecans, and mix them all together and then add this maple syrup type glaze over the whole thing. Great stuff.

Super easy and goes great w/ a crisp sauv blanc
Grill/pan fry sausage (turkey sausage works fine) w/ some olive oil
Cut grilled sausage up into small slices
Chop garlic
Large pan simmer asparagus with olive oil, and add garlic and sausage until asparagus is flexible. Hit it w/ some salt and pepper and its fantastic

This is another easy one that really tastes great
Get two bags of cherry tomatos - natures choice or something like that - cut them all in half
Fresh basil and some other stuff like that (whatever youre feeling, thyme, oregano, bay leaves etc) garlic and if youre feeling it mushrooms, possibly a meat (sliced pepperoni/sausage)
Then literally all you have to do is combine everything into a deep pan (3in is plenty) with some olive oil, s&p, and occasionally stir. The tomatos will release and bam...very very simple, delicious, light red sauce.
Boil out some ziti then throw that into the pan and mix well.
Hit that with some fresh parm or your preference of grated cheese and enjoy!

Don't forget the snotty attitude! I'm not sure I want to make a casserole that makes me feel bad for being American. :tongue: I'd have to remind it that if it weren't for the United States it would be a GERMAN toast casserole.

I like the garlic and rosemary one but they also have lemon pepper, teryaki, southwest spiced, etc. The best part is that it's quick to cook-- 20 minutes per pound and the average roast is about 2 lbs. I MIGHT actually try to cook a plain pork loin one of these days.

I MIGHT actually try to cook a plain pork loin one of these days.
Here's a good all-purpose marinade for tenderloin, tritip, and salmon:
Low sodium soy sauce
White wine vinegar (or Apple Cider vinegar for Pork)
Chopped garlic
Chopped basil
fresh black pepper
Olive oil
Optional: White wine (use for thinning the marinade or stretching it so that it covers the meat)
Optional: Honey (for Salmon), Molasses or Maple Syrup (For Pork)
Optional (recommended for Salmon): Omit the vinegar and use fresh lemon juice
The main body of the marinade is going to be the soy sauce (and white wine). The flavor will be coming from the garlic,basil, and pepper for the most part. The oil helps it to stick to the meat. The vinegar or lemon (acid) balances the saltiness and also helps to tenderize the meat a little. The optional sugar will caramelize as the meat cooks, so don't use too much for a cut that will need to cook for a while, as it may burn. This works great for grilling, but can be used for roasting as well, as long as you have the meat on a rack in a pan so that the meat isn't stewing in the marinade. Works good for veggies too (bell peppers, brussell sprouts, onions, mushrooms), just marinate separate from meat. Marinate in a ziploc, or to prevent global warming, use a vacuum canister or a tupperware, as long as the meat is covered. Meat can marinate overnight, but veggies will be ready after an hour or so.
