If you toast the bagel, then the sesame seeds taste....well...toasty. Otherwise, yeah they're there for texture. By the way, peanut butter on a warm, toasted sesame seed bagel happens to be the s*@t. Thank you.

They just opened a REAL bagel shop in my town. I gotta try this place out. Some Italian guy from Long Island opened it. Should be better than the ones they make at Martin's/Giant (though those ones are pretty good).
