You guys like it? I've had it a few times, and if made right, it's a damn good dish.

I had some yesterday with flank steak, tripe, and meatballs. I'm eating the leftovers right now, and sweating.

My wife is Vietnamese and we eat Pho (pronounced, 'FUH') all the time. I dislike it most of the time if it is prepared with too much star anise. Star anise gives a liquorish-type flavor that most Americanized places serve it with. If your town has an authentic Vietnamese Pho restaurant, you have to go. It is a very traditional dish over there and is enjoyed in small towns, farms etc...but made its way quickly to the big cities, especially in South Vietnam. They are beautiful people and have beautiful food.
The first time I tried it was when my wife introduced me to her Aunt's parents. They were serving Pho in a traditional sense at their house and wanted to know if I wanted some. Being a wise-ass, I said to my wife, "Pho-k Yeah I do." I thought it was hilarious----she didn't...

I since have wanted to open a Pho restaurant called, 'Pho King'

LOVE IT! - One the best cheap eats. Pho 75 in Rosslyn is our favorite. I usually get the chicken - sometimes meatballs, sometimes steak. not the tendons or anything crazy...

It has to be made right. First of all, never order tripe. Unless you know they cleaned it right, better to stay clear. Second of all, it's all in the broth, a good broth goes a long way. Also, make sure to add some chili sauce, cilantro and lemon juice.

I have had it three or four times in and around Alexandria. Never liked it, wouldn't seek it out. I much prefer ramen. A good bowl of that I'd drive an hour for.
