I have two beautiful steaks waiting at home.

I shall be cooking.

I usually rub the steaks with a little olive oil, sea salt, cracked black pepper, and thyme before grilling.

I plan to start cooking at 6:30 tonight.

You have 2.5 hours to come up with a better way.

Tonight's side dishes will be green beans and mac and cheese. If you have a better alternative, again, share.

cauliflauer and some sort of yellow rice. Goyo is ok if you dont have time to make the shit yourself. And cauliflauer is actually pretty cheap right now. Maybe while you are there you can grab 2 small pieces of fish, talapia or rainbow trout goes really well with steak and rice. You're welcome

I'm not a fan of thyme so would go with garlic but each to their own. That said I stick with just the salt & pepper for spices (yes snoogans even good meat needs some seasoning) but thats it. If you want to try something a little different and not take away from the meat pick up some truffle or walnut oil instead of olive oil.

Tonight's side dishes will be green beans and mac and cheese. If you have a better alternative, again, share.
Creamed spinach, lyonnaise potatoes are always a good choice for steak. Although ever since some of you posted about creamed pearl onions I've been making them every chance I can.....so f'in tasty!

Like cabbage? Buy one of those pre packaged coleslaw mixed bags (minus the dressing) and fry in a pan with onion olive oil and then go crazy on spices. I have cooked this about 30 different ways and everytime it is great. Teriakki, ginger, spicy mustard, a little strawberry jelly, garlic and hot sauce - also 1/2 a beer (the other half is for drinking - yuk yuk) and you will be a smacking your lips.

What cut is the meat?

A great way to do it is this:

Get the grill to 500 degrees.

Rub the steak with Peanut Oil(Higher smoke point than Olive Oil...O.O. Has a pretty low smoke point), kosher salt, and fresh ground pepper....Both sides.

Stick it on the grill with the lid open. 30 seconds. Rotate it once after 30 seconds for nice grill marks.
Flip it and do the same thing on the other side.
Close the lid and cook for between 2 and 5 mins...depending on how you like it.

Take it off and let it rest for a MINIMUM of 5 mins.

Eat.

Usually pan-fry, seer both sides on med-high heat for a couple minutes each side, then lower heat and cook each side about 3-5 minutes.

For a side a baked sweet potato split and topped with melted marshmellow and brown sugar.

So long story short:

I got home and the steaks hadn't defrosted. I was... annoyed.

So we had some pork chops that were ready, so I cooked those up instead. I'm saving one chop for lunch tomorrow to have a pork chop sandwich.

However, we did have Trader Joe's Mac and Cheese (LIz's request) which was pretty good for a microwavable side dish.

I will report again on this tomorrow.

Wegman's sells stuff in value sized portions that are vac-sealed. It's very convenient and cost-effective to buy in bulk, keep some in the fridge, some in the freezer.

Because of the vac seal, freezing doesn't damage the food as badly as something from shop-rite.

A Cast Iron Grill Pan is my preferred method.

And don't make me go back to find that hideous excuse for cooking you posted last year.

And, fortunately, he gave the correct answer.

I agree with the peanut oil on principle, but the olive oil is less for lubrication and more for flavor in our case ... sprinkle with salt & pepper, both sides ('cause I hate one-sided-tasting food), add a tiny bit of crushed, dried thyme (because I am on a thyme kick lately) and the tiniest drizzle of extra virgin olive oil & set steaks aside. (If they'd been defrosted and ready to go when I got home from work, I'd have prepped them in a Pyrex & left them in the fridge for the hour or so until Matty gets home.)

Before cooking, I let the steaks stand on the counter for 15-20 minutes to get up to room temperature.

Last time I cooked steak, I seared it in my cast iron skillet & finished it off in the oven.

I find that with the strip(not as much marbling throughout the meat) it's better when cooked medium rare...anything more and it gets tough.

Or course if you can find Prime Aged steaks, then that won't be as much of an issue.

We have an exhaust fan under a built-in microwave. It works fine, but I tend to forget to switch the thing on before it's vital. Like when dropped cheese from freezer pizza ends up on the oven floor and burns, smoking up the kitchen and the rest of the house.

Does yours exhaust out of your house, or does the microwave just blow it in your face like mine does?

My wife burned a pan of oil tonight and the smell is still in my house. Stupid non-exhausting fan.

I seriously did not care about any of the new food no-nos out there, especially with Liz in the last trimester I doubt some cheese in moderation would do any harm.

Here's a fantastic side dish - potato gratin (http://www.epicurious.com/recipes/food/views/Potato-Gratin-with-Gruyere-and-Creme-Fraiche-107310) - my wife makes it a lot when we have company. She uses thyme instead of parsley. Also, I always prefer to grill steaks. If the weather is crappy we have a lodge 12 inch cast iron, a fan, and an open window... Flat irons are awesome for cooking that way. We have been getting them from heartbrand (http://www.heartbrandbeef.com/Heartbrand_Akaushi_More_Cuts-shop_morecuts)beef - they are amazing. 2 minutes a side and they are done perfect med rare.

it looked yummy. all steak should be medium rare (medium at most). we don't have a grill so we do the sear in pan and then a quick trip in the oven, then rest. i always get filets.

I have bouts of paranoia about everything nowadays, especially foods.

Avoiding the foods on the "no absolutely not" list give me a modicum of control over the anxiety, so I avoid the foods on the "no absolutely not" list.

i dont know where you are at but by me, every week something is on sale. one week sirloin, next week strip steaks then tbones, etc. Same with chicken and pork shit. Point is, the price isnt gonna change that much, so if you want one this week and one in 2, there will be some kind of good steak on sale for cheap. And is it really that awful to pay 2 extra dollars for a steak when most people are willing to drop like 8 dollars at burger king?

Never tried that. I'll give it a go

i can't find the directions from america's test kitchen which is how we do it at home. found this from alton brown. this varies depending on the cut/thickness of the steak. also, we use a thermometer to make sure it's hot enough because i like it medium rare and am very mad if it's overcooked. 125 degrees for medium rare, 130 for medium. the following recipe is for a rib eye.

Ingredients
1 boneless rib eye steak, 1 1/2-inch thick
Canola oil to coat
Kosher salt and ground black pepper

Directions
Place 10 to 12-inch cast iron skillet in oven and heat oven to 500 degrees. Bring steak(s) to room temperature.

When oven reaches temperature, remove pan and place on range over high heat. Coat steak lightly with oil and season both sides with a generous pinch of salt. Grind on black pepper to taste.

Immediately place steak in the middle of hot, dry pan. Cook 30 seconds without moving. Turn with tongs and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip steak and cook for another 2 minutes. (This time is for medium rare steaks. If you prefer medium, add a minute to both of the oven turns.)

Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.

My wife and I work full time jobs. She's currently 7.5 months pregnant and really doesn't like driving at night. The closest grocery store she likes is 15 miles past our house, which equates to about a 90 minute trip to get food if we were to apply Snoogan's tips.

When we get home, we're both tired and feel like garbage. So we eat what's in the house.

It's cost and time effective. End of story.

The vac-sealing keeps the meat fresh for a very very long time. We keep it in the Fridge as long as we can. Then, about 3-4 days before the Use By Day, we freeze it. Because we buy in bulk, invariably, there's a lot we don't get to. For example, we got a package of 8 pork chops. We ate 4 chops in a 10 day span, then froze the rest.

So again: We keep it fresh as long as possible, but if we need to freeze it, we do. It's not like we come home from the market and immediately drop it in the freezer.

Central Jersey. There's a Wegman's in Woodbridge, Bridgewater and Princeton by me. If you still live in Bergen County, those are the closest ones to you. (Which is kind of surprising, Wegman's is from Rochester, I thought they'd be in North Jersey first before in Central)

Wegman's also has ridiculously good prices on staples like Milk and Juice, which can be upwards of a dollar cheaper than Shop-Rite.

Wegman's store brand for certain products is also phenomenal.

That's why Wegman's rules all.

1) Not only have I had a steak from shop rite, I worked in their meat department in high school.

2) I've had Wegman's steaks, and Wegman's meat overall smokes Shop-Rite in taste, quality, and pricing.

3) The question is not if I've had a steak from Shop-Rite, it's if you've had a steak from Wegman's. And you haven't, which puts you at a really, really bad advantage trying to prove your point.

4) Again, the only way the meat freezes is if it's near the sell by date. When we eat frozen, It's not like we're trying to cook a fancy dinner with all the trimmings, we're trying to SUSTAIN LIFE.
