I didn't even know there was such a thing as savory banana bread. Just banana or are you looking for a recipe like banana-zucchini bread?

Yup, it exists.....I've eaten it. There used to be a rather nice restaurant that had the most amazing bread board. All sorts of in house baked beautiful artisan breads including a savoury banana that was perfect alongside a main dish. I'd just give them a call but they've been closed for years (and replaced with a Ruth's Chris...ick). It was very dark so must have had molasses....maybe I'll just try playing around and see what I come up with.

Maybe try an anadama bread recipe and incorporate the banana in? This bread uses half a cup of molasses and makes two loaves. http://www.thefreshloaf.com/node/8328/anadama-bread
You could even substitute some whole wheat flour instead of all white flour. I'd try one and a half to two cups of WW.
ETA: This is a great bread to serve with stew or beef and barley soup.

Make sure your bananas are good and Brown...better flavour and mixes easier.
Banana nut. Bread. Similar to carrot cake.

Looks like a very nice bread but what I'm looking for wouldn't have used yeast. Much too dense. That said I'll likely try your recipe as it sounds tasty!
Is there anything as perfect as a very good bread fresh from the oven and with real butter! So tasty :p

That's why we only eat home baked bread now. No bakeries in the area and store bought just isn't the same and usually stale in one day or worse, moldy.

Add some flour to improve the colour, the flavour, and the textoure.
Banana muffins are pretty kick-ass too.

If I were attempting this, I would think about plantains. Plantains are very similar to bananas, but I think they contain more starches than sugars, putting them in a potato-like category. Take a savory potato bread recipe and experiment with substituting plantains. I wonder if some of our Puertoriqueño friends know of anything like this?

Was thinking about plantains but not going to run out to the store (we're having another shit blizzard and its witch tit cold out there) and this exercise was also about using up some stuff I already had.
Ended up with the following for a double batch (2 x 3"x6" loaf pans)
-5 ripe bananas mushed up
-5 cups of flour
-1 cup dark molasses
-1/2 cup brown sugar
-3 medium eggs
-1 cup butter
-1 teaspoon baking soda
-1 teaspoon salt
Going to bake for 50min @ 350 and see what happens. Worst case scenario the birds have something different tomorrow.

Seems like a good recipe for banana bread. There's nothing better than a slice of banana bread fresh out the oven, then fried in butter till it's crispy, then slathered with more butter. Mmmmmm, fat. But I don't see how this bread will be savory.

I'm going to shit a lump of butter from just reading that.
But I don't see how this bread will be savory.
Has about 1/4 the sugar of most recipes.

I see. Have you tried it yet? Sounds like the reduced calories from sugar would allow for more extensive butter-slathering.

I carved off the end piece and its good but not what I was looking for. It rose too much so I'm thinking less baking soda and not as dark as I wanted so need more molasses.

Next piece will be with a healthy smear
