I bought a mini peppermill this weekend so I can have fresh ground pepper on my food at work. I got one that has a salt shaker on top that I have sea salt in it. (I know it sounds gay)
Why is fresh ground pepper so awesome?

I have a salt mill too.


A salt mill doesn't do anything other than make the salt crystals into smaller salt crystals. This is useful if you don't like big chunks of salt on your food or if you want the salt to dissolve quickly in water. If you use sea salt, make sure you use a grinder with a wooden grinding mechanism as the "wet" quality of the sea salt will end up rusting a salt grinder with a metal mechanism.

Not true. It happens to make the salt come out in shapes other than little cubes like table salt, as well, which stick to food much better. I suppose you could use kosher salt for this purpose, but I prefer the finer particles that come out of my salt mill. And I DO use sea salt in it, have for many years, and no it hasn't rusted.

So take THAT and shove it in your mango salsa!

I like to roast fresh peppercorns (in a dry pan) a few minutes before serving and then pour them into my mill, the flavor is intensified and excellent. Also, I prefer my salt in a mill and recommend the simple one in the link below.

Table salt is already very fine, but grinding it could make it into smaller cube-shapes which have a harder time falling out of the nooks and crannies of french fries and the like. My main point is that there aren't any "salt oils" being released when you grind salt, whereas that's the main point of grinding peppercorns.

I assumed from the first quote that you were talking about grinding table salt. I wasn't precise enough when I said "cube-shaped." You know as well as I do that the crystalline nature of table salt causes it to break down into smaller cubic shapes when ground, although the grinding process would make them somewhat irregular, but still maintaining the right angles.

Table salt most certainly WILL form jagged shapes that for all intents and purposes are not cubic (to the naked eye) when ground. Same way you can grind a graphite pencil lead into a point despite the fact that its microcrystalline structure consists of flat planes of molecules.

Try playing with a salt mill the next time you're at work!

Battle Veal
Ingredients:
6 6 oz. veal cutlets ÿ6 Tbsp basil pesto
6 Tbsp Chinese bean paste soy sauce ÿto wrap fat netting
3/4 Cup banana chopped
3/4 Cup mango chopped
3/4 Cup pear
chopped
3/4 Cup pineapple chopped
1 tsp rosemary minced
2 tsp mint minced
1 tsp oregano minced
6 Tbsp corn starch
2 Cups high-heat deep frying oil
8 Cups rock salt
8 egg whites
16 salt-cured grape leaves

1. Pound the veal cutlets flat and spread each one with the pesto and bean paste soy sauce.
2. Create a layer from half of the veal cutlets over a third of the fat netting with the remaining two-thirds of netting laid out to wrap around the veal when it's done being stuffed.
3. Mix the fruits and herbs in a bowl and then layer them on top of the bottom layer of veal. Place the remaining veal cutlets over the fruit, sandwiching it between the veal. Pack it tightly and roll it up in the fat netting.
4. Coat the fat netting-wrapped veal and fruit in corn starch.
5. In a hot wok, heat the oil and deep-fry the fat-netted veal until the corn starch coating browns lightly.
6. In a large bowl, mix the rock salt and egg whites to make a paste. Spread about a quarter of this paste on the bottom of a cookie sheet.
7. Spread half of the grape leaves on the salt base and lay the browned veal package on top of it. Layer the remaining grape leaves over the top, completely covering it. Take the remaining salt paste and cover the grape-leaf-wrapped-veal forming a dome.
8. Roast the salt-crust dome in a 325 degree oven for 45 minutes. Remove and place the dome on a serving platter.
9. Serve the dish by cracking the dome and discarding the salt and leaves. Slice veal pieces and serve with the fruit filling to each diner.

Serves 6 as a medium entree.

Ok, I guess I'm still being too vague about what I mean by "cube-shaped." Even ground table salt will be cube-like in comparison to sea salt, which has various "impurities" which give it its distinctive flavor and flakey, irregular shape. Certain types of sea salt, such as Maldon sea salt, are dryer than others and are fine for metal salt mills. I prefer the wetter variety and just sprinkle it on with my fingers. If you want that broken down into smaller particles for the reasons that you already mentioned, then you'd want a salt mill with a wooden grinding mechanism. However, my original point was that regardless of what salt or salt mill you use, you're not changing the flavor of the salt, just the size of the crystals.

Grind some sea salt. Grind some table salt (assuming you can get it in some sort of coarse form, otherwise most of the grains will pass through the grinding mechanism un-ground and hence cube shaped). I promise you that they will be essentially indistinguishable by shape. Table salt will not be ground into "cube shapes" or something with "right angles". Like I said, try it.

Oh and btw, check kosher salt while you're at it. It is essentially pure NaCl and is not cubic in the slightest. Doesn't grind into cubes, either. Why? Because it is physically raked while it dries and thus does not for perfect little cubes like table salt.

My original point about salt mills was in relation to pepper mills. A pepper mill changes the flavor of the peppercorn whereas a salt mill does not change the flavor of salt.

A mill with a good grinding mechanism will be tight enough that even table salt will be ground into smaller pieces (even though I think there's no point in doing so).

Admittedly, I don't know much about the micrscopic structure of sea salt. It's really a moot point, but I assume that

Ack, I got sidetracked (edit: by poor reading comprehension). Bleah.

I guess the whole argument boils down to the fact that you like your sea salt in tiny bits and I like mine chunky style. I find that a wet sea salt tends to dissolve rapidly on moist foods and sticks well enough unground. I could see grinding kosher salt or Maldon salt.

I find that a wet sea salt tends to dissolve rapidly on moist foods and sticks well enough unground.

I use La Baleine Sel de Mer Gros in the mill; it's a little too chunky to use as is. I use kosher salt when I'm baking.
Oh, and for koshering.

Theres too much anal bickering in this thread, and I ask the mods to lock it. If you want to make a thread about salt grinders, make your own up. This is mine and I only want discussion about pepper. Some of you, in your attempt to "set the record straight" really come across as if your word is gospel and cannot be argued and its really not enjoyable to read or discuss your stuff. Be open to new ideas, allow in your hearts that some have differing opinions and just drop the high horse routine, because its very childish and annoying.

Are salt and pepper truly condiments? Think they fall more into the spice or seasoning category.

And I need more to my life....saffron, paprika (pepper's bastard son), can't make a soup or stew without bay leaf, need allspice cinnamon clove and nutmeg for baking, need cardamom turmeric anise and a bunch of others for EI food, need garlic for everything, juniper berries for gin, lemon grass for pak kanaa moo krob, spearmint for my evening tea, vanilla for ice cream

I have to check out Penzey's, they opened one on Rte 110 in Huntington some time ago but I've never been there.
