Ketchup we have ketchup. That's it. There are different brands and basic changes to the forumula, but it's still ketchup. Different colors were tried but it was still ketchup.

With mustard there is yellow, brown, dijon, honey, spicy, stone ground... the list goes on.

Why has mustard become the thing of gourmets while ketchup has been left behind as a basic condiment?

There was once all sorts of different ketchups, but I guess people just don't care anymore.

Plus, mustard is used a lot in cooking, so it makes sense the variety would change a lot. Ketchup is mainly a condiment and nothing else.

I remember there being a ketchup mixed with Tabasco sauce or something but I don't recall seeing it recently. You can always add stuff to it yourself.

Mustard is its own entity with varieties as you pointed out. Ketchup is a type of sauce.

There is this stuff chili sauce... that is produced by Heinz and other manufacturers, and is frequently found in cookbooks in the U.S. This is chili sauce in name only, as it contains little or no chili pepper. The sauce is based on tomatoes, green and/or red bell peppers, and spices. This sauce is more akin to tomato ketchup and cocktail sauce than predominantly chili pepper based sauces.

Boston Market has a seasoned ketchup that they call "meatloaf sauce", but it's basically ketchup with a lot of pepper in it. it's pretty delicious on their plain chicken.

side note, my ultra-conservative in-laws only use hunt's because they don't want to give any money to theresa heinz-kerry. meanwhile, hunt's is owned by con-agra, one of the sleaziest companies in the country

While riding a train in New York City in 1896, Henry Heinz saw a sign advertising 21 styles of shoes, which he thought was clever. My wife's family all worked for Heinz in Pittsburgh. Her grandfather was a graphic artist that designed a bunch of their early advertisements, including a painting of the Mona Lisa with a Heinz Bottle that is in our house. Needless to say, we're Heinz people.

Make your own ketchup it is not hard. My husband just cooked up a batch yesterday. You can use fresh tomatoes or canned.

i was waiting for someone else to point it out but tomato ketchup is a late arriver in the ketchup field. it used to be a sauce with fish, nuts and mushrooms, etc. today you can still find mushroom ketchup some places and banana ketchup is big in i think the philipines (buncha fruits). thanks wikipedia.

Chipotle Ketchup
Makes 1 cup

The celebrity chef known for his love of the grill says, “I love ketchup as much as the next American does, but when I was designing the menu for Bobby’s Burger Palace, I knew that I wanted to have a little something extra to offer in the squeeze bottles. The simple addition of pureed chipotle in adobo gives prepared ketchup an exciting smoky edge, while still keeping its sweet yet tangy identity intact.”
Ingredients:
1 cup ketchup
2 to 3 tablespoons pureed canned chipotle in adobo (depending on how spicy you prefer it)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Directions:
Whisk together the ketchup, chipotle, salt and pepper in a small bowl. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. The sauce will keep for 1 week in a tightly sealed container in the refrigerator.
