I'm going to be by myself this Thanksgiving, but that doesn't mean I can't make something good (and if I fuck up no one knows). Not sure what the full meal plan is, but based on Patrice last week I am brining and grilling a Cornish hen. If it sucks I have a backup hen and a deep fryer. What are you all making?

Having Thanksgiving where I always do: with my mother, father and grandmother. We invite a friend of mine over who would rather eat with us than his family and an old family friend who's wife passed away and again, would rather be with us than anyone else he knows.\

We get a local Italian deli to make our dinner for us, so we'll have a 20 lb turkey, the guy does his turkeys perfectly. 10 lbs of mashed potatoes, grilled corn, green beans, carrots, stuffing, gravy and fresh rolls.

I'll probably make my usual: Deviled eggs and candied yams. Guests are bringing 2 pies and 2 cheese cakes.

It's gonna be off the chain, yo.

Then after all the eating, my buddy and I go sit in my grandmother's living room and digest in the glow of the TV for a couple hours.

Some people don't like having the grease from the bird soak in it, it increases the time the bird takes to cook, and it won't crisp at all. Obviously crispy stuffing is a personal preference.

Unless you stuff a turkey the moment before you cook it you are begging for bacteria and toxins. Either way you end up with mushy gross stuffing. Dressing is the way to go.

you should have come for dinner then. there was about 10 lbs of rutamousse for 7 people.

i'm also thinking of making homemade caramel corn for snacking. homemade caramel fucking rules. especially chocked full of cashews.

I like the taste, but I have noticed the beef stuffing lacks that crispy stuffing texture

It dries out the bird quite a bit, it makes the bird cook completely uneven, and can slow the cooking of the inside of the bird. So when the outside reaches 170, the interior of the bird could be like 130 - 140. And then your stuffing is covered in near-raw bird drippings.

My wife makes this dish with brussels sprouts and panceta (italian bacon). It's pretty easy. You cut up the sprouts (halves or quarters depending on the size) and mix in diced panceta (ask for a 1/4 cut at the butcher) olive oil, garlic, and salt and pepper. You then cook it for an hour or so. It's fucking delicious! I've never liked brussels sprouts, but this is the dish I anticipate most now at Thanksgiving

i'm making my first thanksgiving for just the two of us, well sort of. my boyfriend is gonna be on call thursday night so i have to bring him dinner at the hospital. i picked up a 4lb turkey breast & i honestly have no idea what to do with it. i've never made turkey before, so this should be interesting.

i'm only going homemade on the turkey, mashed potatoes & the chocolate cream pie.

since i have to bring the food to him i picked up a vegetable medley we both like & he loves the jelly cranberry sauce stuff out of the can. i'm also gonna make krusteaz honey cornbread.

my big challenge aside from trying to cook a turkey is to figure out how the hell i'm gonna get everything over to him & have it still be tasty when he gets to eat it.

It's been a long time, but I remember seeing thermal bags at Wal Mart in the grocery dept. They're like a cheaper version of what the pizza guy uses.

Don't worry about the turkey breast. Even if you just use the directions on the package, they almost always come out fine for me. But it wouldn't hurt to do a quick (turkey breast recipe) search on Google. That's how I get all of my recipes.

Coolers can also be used to keep things warm. Pre heat it w/ hot water or something.

Screw the food police and their no stuffing birds. Pack that cavity full of goodness and use a meat thermometer to insure proper cooking temps.

cup and a half cranberries
1/4 cup sugar
tablespoon of red wine vinegar

bring to a boil

add

two minced garlic things
1/2 a red onion chopped howeva you wants

let simmer until all the cranberries have popped

put it into a bowl and add

two tablespoons of minced basil
one teaspoon of oregano

stir that up and let it cool for a bit. then make the bread. it should serve around 16 pieces unless you drop two of the pieces of bread on the floor when you are taking them out of the oven. so watch out for that.

I made a nice oyster brioche stuffing. Couldn't find brioche in Japan, so I used this really sweet white bread they sell in the supermarket for it (a worthy placeholder). Also some butter, heavy cream, garlic, cayenne pepper, and I substituted the onion with french onion dip mix. Very big hit with my friends.

jauble, i got a tip from my uncle about cooking brussel sprouts today. he said to cut an X into the bottom of the stalk before cooking. he said they turn out with a lot more moisture in the middle. good luck on finding some.

i bought one of those thermal bags at the grocery store this morning & it worked pretty well. Unfortunately my boyfriend had to tend to emergency after emergency so i sat in the hallway outside the resident room for an hour until he was able to come in & eat quickly. the turkey was nice & warm & to my surprise not dry at all. i did have to microwave the gravy and mashed potatoes when i got here though, but the vegetables & stuffing made it just fine.

i cleaned everything up & now i'm waiting for him to get out of surgery so we can eat some of the triple layer chocolate pudding pie i made that's sitting in the mini fridge.

Allright, got to do my own dinner tonight, and I feel like I'm carrying a child in my prostate. Food checklist:

17 lb turkey, did the high heat roast this year and love it.
Mashed potatoes
Candied sweet potatoes
More of the cornbread sausage stuffing

Allright, got to do my own dinner tonight, and I feel like I'm carrying a child in my prostate. Food checklist:

17 lb turkey, did the high heat roast this year and love it.
Mashed potatoes
Candied sweet potatoes
More of the cornbread sausage stuffing

Between 475 and 500, only took about three hours, and it was perfect.

Look into it online though, you kind of got to have your shit together, equipment-wise, or else you'll burn your house down.


Actually, I just re-did the math, it was only about two and a half hours.

cool, thanks. i've checked a few places. alton brown's recipe says to start it off at 500 for the first half hour then 350 for 3 to 4 after. my mom told me 350 at 20 mins per pound.

Brining has to be the best thing I have done to my birds. This year I am smoking the bird half an hour a pound 14 lbs..

I smoked that bird for 7 hrs.......and holy shit it was incredible. The smoke penetrated the dark meat and basically all the meat fell off the bone.
