View Full Version : I can't freaking boil eggs!

In the past, I always just boiled them for a few minutes. It cooked them, but they were never "perfect". I've tried several methods that I found online. All of which involve bringing them to a boil, then taking them off the heat and sit covered for a while.
The method I tried tonight had me bringing 12 eggs to a boil, covering and setting aside for exactly 17 minutes. Then immerse them in ice water for 2 minutes, then boil for another 10 seconds and back into the ice water. This method ALMOST worked. They were slightly underdone. Fine for egg salad, but not what I'd want to use for deviled eggs.
Does anyone here have a fool proof method?

this is what I do and my eggs turn out
put the eggs in the pan
put COLD water over them to cover the eggs completely by 2 inches of water
bring eggs to a boil
then keep boiling for 15 minutes
after remove eggs from stove
put the pan in sink and let the cold water run over them until you can handle the eggs
put them in the fridge to cool completely
I have never had them under done.

Do they come out looking good? You know... Not cracked and no greenish yolks? I don't think I've ever boiled eggs for more than 5 minutes, and not had them start cracking and oozing.

cooling them with cold water also removes most of the stink of hard-boiled eggs.

This method works great. If you have trouble with the yolks discoloring, replace the cold water from the sink part with a prepared ice bath to cool them more quickly.

I usually bring the water to a boil first, the eggs are sitting out and have come to room temperature by the time it boils. I pierce the eggs and then carefully drop them in the boiling water. You may have one or two cracking but the piercing usually helps keeping them intact. Soft/ runny eggs stay in for 4-5 minutes, hard boiled eggs 7-10 and then go in cold water in the sink which I tend to cover with ice so it cools faster. The duration depends how fresh the eggs are, if they are farm fresh right off the butt of a chicken they tend to be softer and peel harder.

I use a method from Cook's Illustrated that comes out perfect every time.
Place eggs in pan and cover with cold water to 1" above the eggs
Bring to a boil
When it reaches boiling, turn off heat, cover and let sit for 10 min.
After 10 min., place in an ice bath for 5 min.

I'm with biggirl on this one. I think starting them in cold water helps to prevent cracking. Seems the quicker you can cool them the better they peel.

I do this, but just lower the heat rather than turn it off and let them boil for 10 minutes. They usually come out fine. Eggs crack sometimes, it's unavoidable.

Push a thumbtack or similar-sized pin through the shell on the fat end of the egg. If you do it carefully you won't crack the egg. Put them in enough hot tap water to cover the tops + 1-2". When the water comes to a boil, set a timer for 10 minutes. Then shut them off and cool them by running cold tap water over them in the pot until they are cool enough to handle. Peel and eat. Yummy.
Putting the hole in the shell allows the gases to escape the shell and gives you nice fluffy yolks. No more green yolks.

This is exactly how I do it, except 9.5 minutes instead of 10, and cold running water over the eggs instead of an ice bath.

I chuckled last night when I saw containers of "pre hard boiled eggs" next to the regular eggs at the supermarket.
If you can't boil an egg, you should starve.
and btw...I can't attest to it working with many eggs at once but the method that I use has already been posted.
1. Fill saucepan with cold water to cover eggs.
2. Bring the water to a rumbling boil.
3. Remove from heat and cover for 7-8 minutes.
4. Drop into ice water for 3 minutes.
It is foolproof and creates a perfectly cooked and tasty egg.
