I brought this up in the tp Chef Thread but I think it really needs to be discussed on a larger scale. Shrimp seem to really be falling off lately. Dishes with shrimp on Top Chef are all being called bland and flavorless. Other proteins like the scallop and halibut are kicking shrimps ass all over the place. Has shrimp left our hearts and minds? Are shrimp done? I would really like some imput on the issue from culinary experts on the board. If they are not available, I'll take the opinions of other random douches.

I don't really like shrimp. I've always thought scallops had more flavor.

I used to love shrimp but never really want it anymore. I still enjoy shrimp cocktail and shrimp e'toufee but that's about it. I'm trying to branch outside of shellfish to more "real" seafood.

A lot of places don't know how to cook shrimp properly and it ends up being rubbery and hard...

I blame Olive Garden and Applebee's for most of our culinary complacency.

I would say 90% of the time I eat shrimp out it is overcooked and improperly seasoned.

Most of the shrimp we eat in the US is farm raised. I don't think it tastes nearly as good as the old stuff. Most come from foreign countries .

Huh?

I pass a multitude of shrimp trollers every morning crossing the bay. I can't speak for the East or West coasts, but shrimping is still the #1 seafood industry on the Gulf Coast.

I'm not saying there aren't people farm raising shrimp, and I know the Japanese are famous for fishing in "international waters" just off the US coast, but I'm not sure where you're getting your "Most" facts.

Take a deep frying pan and melt some butter and a hefty amount of paprika, chopped garlic and minced onion. Maybe some red pepper. Toss in some cleaned shrimp with shells on, and sautee until almost all the liquid is gone. The paprika will redden the flesh and the other spices add a kick flavor to it.
