You dont know how happy i am to watch that!
also whats on the other side of your flat top. You need bigger one. That way you can put your butter on your muffin and put them on the flat top.
if you had a bigger flat top as well you could put your clarified butter on the side by the stove instead of dripping BUTTER ALL OVER MY PANCAKES!!!

and you should pre-make those honey cups. that would blow balls doing them one at a time when its super busy.

It was my apron I wiped it on. There's a whole bunch of shit that goes down in restaurants that you have no clew to.
If I was you I would just cook your own food. Don't even buy prepackaged foods. As a matter of fact.....don't buy food at all. Lots of stuff touches anything you eat. Even "farm Fresh" food.

uh..........come on.....you can choose the ingredient. I think we'de have to somehow keep the videos under 8 mins though. That could be hard start to finsh. But if we prep up the stuff before hand and just put it together on tape it could work.
And please, please please post some cooking videos here. I'd love that.
BTW- I think I could do something with velveta, peanuts and coolwhip. How does How does a creamy peanut butter pie sound? I;m pretty sure the velvetta would fit just fine into the pureed peanut butter and coolwhip to make a deliciuse filling for a oreo pie crust. Trust me. It'll work.

I was kinda bummed out about the lighting as well. It's chucked full of florescent lighting in our back kitchen. Not sure what to do about that. Any Ideas? It's pretty dark if I turn off those lights.
The front line has natural bulb lighting due to it being a open kitchen. We don't want it bleeding into the dinning room.
That;s a good idea....tomorrow I'll give you all a walk through of our beautiful dinning room and bar.
ANd your right... it does take a half hour for that oatmeal....but it's heads and tails so much much more betterer than instant. So creamy!!

I've always cooked evenings at the restaurants. I never wanted to cook breakfast. Unless it was just to cover a shift or what not. But when this Hotel opened up the Ex. Chef asked me if I would cook breakfast. No one else wanted it. SO I took one for the team and did it.
Now I love it!! I get in a 4:30am , but more important...I'm walking out that kitchen door around 1:00PM.
SEE YA BOYS!!! Have a nice lunch and dinner shift.
Granted...I have to do breakfast alone. We average around 75 guests or so. From 7:00am to 10:30am. But a couple of times I've pushed out well over 100 by myself.
Needles to say...I'm very popular with the Ex. CHef and his work cost analysis. He's getting over on me. But that's OK...he just gave me employee of the month.
I got a free massage and $100 clams for that one.
I use to think breakfast was for the ham and eggers. hehe
But now I think it as more of an elitist thing. Maverick cook.

Everyday when I take the service elevator up to the second floor to clock out, I stop by the laundry room and say "Bye Girls" to all the ladies there. It's kind of a ritual now. They expect it and I do too. They even once washed my CHef jacket on the fly when a one gallon bottle of red wine busted all over it. Love those girls in the laundry room.

The film crew consists of who ever is around when I need to get something filmed.
This one was filmed by Dwayne. He's a 6 and half foot tall huge black guy that does the overnight front desk thing. He doesn't seem all that bright to me..but it may just be his huge size. Kinda like Andre the Giant.
I remember it was the second time we meet and I was setting up the kitchen. He came over to me behind the the line and said "I'm going to call you Magic Man...You call me Diablo".
Ever since then I'm like "hey Diablo, hows it going?" Then he says "Pretty good Magic Man" He just stands there and watches me work. Like it's kitchen stadium or something.
SO that day...I put him to work.
I also have this butch lesbian that does room service that films for me. I love her to death. Best ever.

The potatoes were not reheated, the were totally done on the grill.
As I said, I have replacemnet burners, I just have to get to it. (I have no time for coal)
I micro-steamed the veggies and tossed them with onions on olive oil. Damn good.
As for my steak. Not low heat. Perfectly grilled.

You don't remove it until it is cooked. That's part of the flavor.
For years butchers were casting this aside as dog meat. This was one of the treasures I discovered in Argentina.

We put differant toppings on them. I.,E. ham and gruyere with a sunny side egg, mushroom ragout with brie cheese or a ruben style rosti with all the ruben fixins.
Those steamers rock the fat ass. They could fit like.......4-6 babies.

Place about a half a pound of butter pats around the top evenly, put the top on and surround with coals. DOn't let them touch the sides. No coals underneath and a bunch of coals on top. Cook till golden delicious and yummy.

Let's see.....I started the chimney at 10:00am or so...It took about 1 hour to make good coals. So at a little before R&F I set the brisket on. Say it's been about 6 hours at a temperature of about 220 degrees. Just enough to boil my beans. Sometimes higher temp. because I added fresh coals. No problem though....just keep your eye on it.

bacon wrapped chicken, onion(vadillia), pinapple(on hers)
Then put it in the grill and used apple wood for the smoke.
There was some left over bacon pieces that i threw on the grill.
I think that is how i will cook my breakfast bacon from now on.

bacon wrapped chicken, onion(vadillia), pinapple(on hers)
Then put it in the grill and used apple wood for the smoke.
There was some left over bacon pieces that i threw on the grill.
I think that is how i will cook my breakfast bacon from now on.
applewood smoked cooked bacon.

at my sister-in-law's cottage on keuka lake we cook all the bacon on the grill. kinda like chuckwagon does (on a cookie sheet) two pounds of bacon on one sheet cooks up in about 15 min and there is very little clean up. :thumbup:

yup.
you could due skewers off all meat and skewers of all veggies.
but usually they will be done(correctly) at the same time.
so just throw the meats on a few minutes first then the veggies.
