What are your favorite vegetarian lunches to pack and take to work? I am trying to make the jump but I need some more good ideas.

chips and salsa with a margarita on the rocks...favorite lunch ever.
p.s. don't forget to put the margarita in a thermos.

lettuce(better yet arugula) , tomato, roasted or grilled eggplant, peppers, zucchini, fresh mozzarella on a whole wheat or sundried tomato wrap. pack balsamic vinaigrette on the side
add grilled portabella mushrooms if you like them

If taking a lunch of leftover vegies I usually will have a grilled vegie night before. Soak squash slices, egg plant (after treated with sea salt), and what ever else in olive oil, salt/pepper and grill to liking. Then in a foil packe I put sliced bells, onions, tomatoes, and whatever soft vegies you can think of in a olive oil, salt/pepper mix, close the foil and throw it on the top rack of the grill.
Perfect, especially when drinking a few beers while grilling.

Hmmmm....
I like hummus, so I used to use it like a savory peanut butter on a slice of whole grain bread and top it with shredded (or julienned) carrots. You can switch out the carrots with anything you like - roasted red peppers, grilled zucchini, grilled portobello mushrooms, etc.
I also like Veggie Patch brand spinach bites, buffalo chick'n bites and corn bites, but they have to be heated up.
Grilled veggies with goat cheese spread on whole grain bread is another standby for me (I like goat cheese; sue me.)
Organic yogurt with frozen berries ... by the time lunch rolls around, the berries will defrost and it'll almost be like premade fruit-on-the-bottom yogurt. You can do a few variations on this, even making it into a shake, but that would probably work out better for breakfast.
Granola, oatmeal or other cereal with dried fruit and/or chopped nuts. (Requires a bowl, spoon and pre-measured servings, as well as access to milk. Or pack with yogurt in separate containers ... I use Ziploc brand 1 cup containers.)
The classic peanut butter & jelly or jam ... I don't like grape jelly, so I tend to use raspberry, blackberry or strawberry preserves. Or even Nutella. (Yum.)
Cheese sandwiches.
You can try vegetarian "cold cuts" and soy cheeses but I thought most of them were pretty wretched ... of course, this was 10 years ago, so who knows what they're like now!

Thanks for the links, Rose! Too bad the spinach-and-squash salad has honey in it ... grrr. (Honey is off-limits for me right now.)
I agree; those cookies are insane, even if you aren't vegan. (They sell them at the burrito place we go to in New Brunswick. Nom.)

Seitan Burrito. It's made exactly like a burrito but with Seitan instead of chicken or beef.

I have had an identical tempeh reuben sandwich in Grass Valley, CA and Sag Harbor, NY. best vegetarian sandwich I have ever had. the two places seemed similar too.

Trader Joe's has some good veggie "cold cuts" and veggie cheese that I use to make sandwiches. They also have the veggie hot dogs and burgers.

I don't know about lunch but this place called Panera has a Mediterranean Veggie Sandwich that is unbelievable. I treat myself to one of those every now and then.

I don't know about lunch but this place called Panera has a Mediterranean Veggie Sandwich that is unbelievable. I treat myself to one of those every now and then.

People really need to know about this sandwich. This was one of the few vegetarian meals I actually enjoyed while I was out.

I also dig Peanut butter and cheddar cheese, its really good.
apples and peanutbutter go well too. so does peanut butter and cottage cheese. cottage cheese and salsa is also good
If you go Chinese food, Vegetable Lo Mein and Spring Rolls are always good.
I luckily have a diner near wear I work that makes a bunch of different Vegetable wraps with all sorts of stuff like portabellos, peppers, asparagus, zuchhini...
If you eat eggs, you can always go to a deli and get egg salad.
Pizza's obviously a good choice. There's a couple places that make gourment vegetarian pizzas around here.
Pasta's good, but I generally wouldn't overload on it unless you know you're going to use up the carbs.
If you make your lunch, learn a couple rice & tofu recipes. It's pretty simple.
California Rolls and Vegetable Rolls are meatless (California uses imitation crab meat), if you can get to some sushi.
Soups work too....broccoli & cheddar, tomato, etc....same with fruit salads and regular garden salads.

There's not a ton of great Chinese around here, but there's a couple good places that might do something similar.
