Simple enough question. Do you like your meatballs soaked with tomato sauce so it's soaked into the meat, or do you prefer them plain so you can add as much or as little sauce as you desire?

I'm a plain guy.

I am not a big sauce guy either GVAC. I don't mind if the meatballs were cooked in the sauce, but I usually roll with a minimum of sauce on the meatballs and pasta. Just a personal choice I guess.

I do that with just about all sauces in all meals.

Always cook my meatballs seperately, and then pour sauce on them. Only meat I cook with the sauce is pork and country spare ribs and maybe steak sometimes. And chicken.

i fry them in a pan then throw them into the sauce at the last hour of cooking. then usually after i break them open they get slathered in sauce again.

I am with Dru and drjoe, make meatballs and brown them to make them a bit crispy.

Then toss them in the sauce to stew with that. Any other way and my grandmother would give you a backhand.

I am with Gvac and Geno. Cook them separate and then add sauce.

I brown them in olive oil in a cast iron pan to give them a little crust and then pop them in the oven to finish.

I go pretty sparse on the sauce.

My grandma ( an off the boat Italian) says you have to cook them in the sauce or else you just have little meatloafs, she may be right but cooked in the sauce makes them a little soft and smooshy.

I also pan fry them and put them into the sauce at the last minute (usually no more then 5 1/2 minutes), there's nothing i hate worse than a soggy meatball.

she's right about the meatloaf. but adding different amounts of breadcrumbs to the meatball mixture helps with the texture. it's all to personal taste of course. i don't like mushy meatballs either.

I do not add breadcrumbs to my meatballs. Chopped onions, oregano, rosemary, garlic powder, salt and pepper.

If you add breadcrumbs, you might as well can the pasta idea and add some cream of mushroom soup and peas. Cuz you got little meatloafs.

Grandma was from southern so I don't know if it is a regional thing. Thats just how I grew up, she did all the cooking

I think that it depends on how many you're cooking for:
for a couple I like to cook them through in the pan...
for a family or a big party... you gotta finish them in the sauce.

I brown them in a frying pan and cook them for a while like that, and then add them to the sauce. My grandmothers secret was to soak Italian bread in water and add roll the bread into balls and add the wet bread to the meat, and then pan brown the meatballs. Always came out so good!

Pan fry, along with the sausage and pork. Then into the sauce for a few hours.

i've been cooking the A16 (http://www.sfgate.com/cgi-bin/article.cgi?f=/c/a/2005/02/09/FDGO9B4IL81.DTL)(look for the Italian section of the article)meatballs for years - they are best homemade meatballs I've ever had. They were better at A16 though...

i either pan fry or throw the meatballs into the oven to brown off depending on how much effort i want to put in. once browned, ill throw them into the sauce for a couple hours. and i always add breadcrumbs to my meatballs.
