Looking for some good, unique egg salad recipes. I made 4 eggs yesterday with a tablespoon of mayo, salt, pepper, paprika, chopped celery and a squirt of deli mustard split into two sammiches on white toast. It was kindve short on flavor so im looking for what other people do. Thanks!!!!!

Change it to whole wheat toast and I'm there. Tell me how you boil your eggs.
This is my routine for hard boiling eggs.
Put eggs in a saucepan and cover with cool water.
Bring water to a boil,remove from heat and cover with a lid.
Let sit for 8-10mins.
Voila!
Perfectly cooked eggs.

put in some chopped gherkin pickles
they add a little more crunch
and delicious flavor

use spinach leaves instead of lettuce and tomatoes on the bread.
and mix the mustard up a bit... go with some dijon... tastes way better and I also like to get it on a whole wheat wrap or spinach wrap sometimes.

That is very close to how I cooked my eggs. I boiled until medium boil then removed from heat and covered for 7.5 min. Then I gave the eggs a cold bath to stop cooking. The yolk was still very moist but firm, similar to some of my failed attempts at soft boiled eggs (when I hardboiled the egg)

If I can find some pickles in my house I will definitely do that!
