These olives are typically purple in color and are stored in a curing water or oil.

I find they have a smoother taste than green, but not that mellow flavor of a black olive. But I'm used to mediterranian foods like feta cheese, goat cheese, weird vats of pickled shit and other stuff. If you're not used to it, ease into it or avoid it.

No, those are other olives. I have no idea what the names of all these different olives are but I know the ones you're talking about and the common kalamata olives you get in a jar aren't those.

Black olives are so versatile. I can put them on pizza, in salads, mixed in w/ chicken and pasta dishes. They're FABULOUS! The only time i use green olives is if i cook empanadas for my dad, he's the only one that cares for them.
