Mary Jo does the same big vats of sauce with meatballs sausage meat about once a quarter. She doesn't however freeze the 25 or so jars. Filled to the top while warm it vacuum seals closed (you hear all the lids pop) and then it goes into the fridge. You ought totry it it probably taste better from fridge then frozen. They've done it all their lives and its never a problem.Old B&G pickle jars work the best perfect size and wide mouth for meatballs.

It's a no frills sauce that's good in a pinch and will cook quickly in a saucepan.
