That layer of grease only happens on low budget pizza at places that use canned sauce and cheap mozzarella. If you see them put that on a plate, push it back at them, turn around, and walk out the door.

i actually hated cheese all my life.. the most I would eat was a melt over a Hawaiian sandwich or baked Camembert...
then I started traveling a lot while working as a tour guide for a bus company and I saw a lot of Europe.

On a trip to South Tirol (the Italian side) we were served fresh house made mozzarella with tomatoes, basil and balsamic vinegar (the classic caprese) and I was in love...
I found it worked almost like an aphrodisiac after... I just loved it.

I still did not eat much cheese after that other than fresh mozzarella.
After I had my kid my interest in wine grew and grew and the same happened for cheese. I all of the sudden was not afraid of trying all kinds of cheeses and pairing them with a good wine.
Now there is hardly any cheese I don't enjoy, depending on the meal, the wine and the situation.

5 Way Grilled Cheese
Garlic herb whipped butter
Grated parmesan cheese
Sliced sourdough
Sliced mozzarella, jack, cheddar, and swiss cheese. (1 slice each per sandwich).


Spread butter mixture onto bread, then dip each bread into plate filled with
grated parmesean.

Lay both pieces of bread on hot frying pan and cook at the same time.

Add 2 slices of cheese to each piece of bread (ie mozzerella/jack one side
cheddar/swiss other side)

Once browned put pieces together to make the sandwich & cut the side crusts on both sides off so you get a cheesy bite.

It is...after I saw the show I had to go try it and it was very yummy! I especially like the parmesan that is toasted on the outiside of the sourdough bread. mmmmmm
