Brussels Sprouts. I know they are UBER good for me. I just don't know how to prepare 'em. I'd usually just steam them and do what I did when I was 6 years old.
PLEASE!!! I want to EMBRACE this veggie and get all the nutritive value from it.
Anyone got good recipes.... I'm thinking olive oil and some garlic.

The olive oil and garlic sounds good. I've never cooked them myself. I love them if they are cooked enough. I doubt they are nearly as healthy when cooked so much, though.

Me too. The ONLY way I can eat an olive is if it is stuffed with a cayenne pepper.

I use a mini-masher or my fork. For some reason I use to get a kick out of crushing them before I ate them, so I figured I'd take it to the next level.
They are good surprises in meatloafs too. Brussel Loaf.

I don't think I've ever eaten them but I heard if prepared correctly they can be delicious.
Are they like tiny artichokes? Do they have a similar texture?
KingGeno

I would say they have the texture of.....................................mini-cabbage? They can be hard to bite through the center, but if prepared correctly they can be very good and easy to eat. It took a while for me to get used to them, because they have a hearty taste to them. Once I got past that they ended up being very good. Not something I can eat with every meal, but good.
I'll never be able to get past beets though. Ugh x1231.

I absolutely loathe Cucumbers. When I accidentally get one in a bite of salad I cringe chewing it up. But, I just had some sushi Saturday night and one of the rolls had cukes in it- and I didnt mind it too much. The soy and wasabi hid that nasty taste pretty well.
I love pickles though - confusing!
"I hate cucumbers as much as I hate pennies! Worthless!

The only veggie I've found I can't stand is raw celery. Something about the texture with the strings in it grosses me the fuck out.
As for Brussel Sprouts, get small ones. The bigger ones just seem to have more of that "blech" taste and take much longer to cook throughout, there by inviting improper cooking and grossing out.

Celery is worthless. Brings nothing to the table at all.
Raw cucumbers are terrible, but mixed with other things I can tolerate it. But barely.

Onions. I cook with them (not diced but quartered) for flavor but will remove them when I eat. I can not stand and will gag at the raw onion taste. It is weird but it's me.

For brussels sprouts, I usually get the Birdseye Steam Fresh (when they are on sale), microwave them until they're bright green (maybe a minute to 30 seconds shorter than the package calls for) and then halve them, saute in a bit of olive oil, hit 'em with salt & pepper and then a little bit of good balsalmic vinegar. (ShopRite brand in the little bottle is pretty good.)
For cauliflower, I've got a bunch of different recipes ... but my mother & I made one that was an oven-roasted Manchurian spiced cauliflower that was great. It was in Cooking Light magazine this past summer as part of their "Inspired Vegetarian" feature each month.
I think I've tried pretty much every vegetable available at the grocery store, and I've also re-tried stuff (like brussels sprouts) to see if I liked them as an adult.
However, the one vegetable I haven't liked since I was a kid has got to be lima beans.
