Last night, I got in late, so I was hungry. I searched around and found bagels and cream cheese. We had a lot of leftover smoked salmon from new year's, so my wife froze it. I was considering putting some on my bagel, but it was frozen solid. I decided to see how it would be if I fried it up in a little oil. I figured it would be a huge failure because I've never heard of anyone else doing it, but it was really good. It really brought out the smoky flavor of the salmon. Anyone ever heard of doing this?

hey what coincidence, last night I had frozen salmon, thawed it and was just going to pan fry but I decided to coat them in seasoned flour, then into egg with chopped scallions and a ton of garlic, s/p, then into hot pan w/ alot of ol oil. The egg was preventing the salmon to cook inside so I broke them up into squares, seared it all on high heat, turned out great.

One of my favorite breakfasts is to take some smoked salmon, cut it up into small pieces, fry em slightly and scramble it all together with a few eggs.

Now Im fuckin starvin!

What kind of oil did you use?

Just a little canola. I usually cook with olive oil, but I didn't know if it would work with the taste of salmon.

Olive oil won't hurt salmon. If it's a good olive oil with some citrusy notes, it might even improve it a bit.
