This year I'm making a boatload of Rice Balls to bring to my sister-in-law's on Christmas Eve and a Pannettone Bread Pudding w/ Amaretto Sauce to bring to my parent's on Christmas Day.

ERRRR.. i am stuck going to my GF's brothers for Chirstmas Eve dinner.

they arent sure what they are having yet.

and at first they were planning on fucking corned beef. i like it but what the fuck.

Now they just asked for us to bring a dessert, more than likely the only one, but my GF is making apple crisp.

On Christmas Eve, I'm making filets and saffron rissotto for my wife, myself and my mother-in-law. I think we'll also have "Grasshopper" ice cream drink/dessert for afterwards.

My fiance and I are doing a sit-down dinner for our friends:

Clear borscht with croquettes
Stuffed cornish hens
Baked potatoes
Salad
Eggplant spread
Roast Beef
Quiche
String Beans
Beets
Mushrooms in cream
Cake (Paula Deen's recipe)
Lots of liquor and hopefully gonna try some recipes from this thread (http://www.ronfez.net/forums/showthread.php?t=75684).

Ahh yes grasshopper, the first drink I ever made as a young lad of 12 after finding a mixing book behind my parent's bar. Creme de Menthe, Creme de Caocao, and vodka right?

I could live off of them.. When I used to work in a deli/caterer place, For Christmas alone I had to make 500+ of each rice balls, potato croquets, and mozz sticks.

My wife and I are hosting this year. We've got baked ziti and meatballs and I'm making a london broil marinated with barley wine. Not to mention the usual cheese & crackers and other stupid appetizers. I'm looking forward to the meatballs that I made, a combination of sweet italian sausage and ground beef. And I'm looking forward to making the london broil, I'm using a new recipe and throwing it on the grill with some wood chips.

my mom and aunt are doing all the heavy cooking for the meals, but i am going to bring over some homemade caramel corn with my grandma's caramel recipe. so delicious and easy. and i chock it full of cashews.

We're scheduled to bring the orange cranberry-date coffee cake I made last year for a pre-Christmas get-together to Matty's brother's for Christmas Day brunchy-food.

And I've already made my "infamous" Barilla-box lasagna for my family, who were down this past Saturday to celebrate and exchange gifts (early) for Christmas. It feeds a crowd and, if there are any leftovers, they stretch the meal for a couple of days more.

Other than that, I'm working out what to do for Christmas Eve dinner with my mother-in-law.

10lbs+ of Colossal King Crab legs, scallops, and fresh Crab Marinara and spaghets for Christmas Eve. Roast with other things for Christmas day. Can't beat it.

For Christmas Eve, when the whole family gets together,

I'm making a run to the liquor store.:drunk:
The wife has to make the deviled eggs and the cheesecake.

We have Christmas day here. A smaller affair.

I'll start with a nice Spiral Ham (thanks Shop Rite)
Mashed and sweet potatoes. Green beans sauteed with onions and mushrooms, corn, and stuffed portobellos.

Vos?) and rotten shark when I dated a Scandinavian chick in college..who later broke up with me for a black guy from my Swim Team...but I digress.

I hate to give a cop-out answer, but I do it all by eye. But I'll do my best without measurements to lead you in the right directions.

You'll need:


Carolina Rice
Shredded Mozzarella
Whole Milk Ricotta
Garlic Powder
Black Pepper
Salt
Bread Crumbs (Italian Seasoned if you don't feel like seasoning them yourself)
Corn (or Peanut) Oil, enough for deep frying.
Use Carolina Rice and make it as directed. Only for the liquid use half water, half chicken stock or broth. When Cooked, dump the rice in a big bowl or container big enough to mix with your hands. Add:

Shredded Mozzarella Cheese
Whole Milk Ricotta
Garlic powder
Salt and pepper to taste.

If you want to season plain bread crumbs season them with the following to taste: garlic powder, parsley flakes, salt, pepper, onion powder.

Since I have no measurements here, you'll have to taste and adjust amount of ingredients to your taste. Once you have the consistency that they can hold their shape, form into rounds (whatever size you prefer).

Now you just have to egg and bread them. Roll the balls in a beaten eggs and then roll them in bread crumbs. I like to do this twice to get a nice coating.

Heat a pot of oil (enough oil to submerge the rice balls) to 350 degrees (or use a deep fat fryer if you have one) and fry them until they are golden brown.

My mom usually puts them on paper towels to absorb the excess oil, but I'll take a tip from Alton Brown and use a cooling rack over paper towels so they don't get too greasy.

I hope this 'recipe' came across ok...

No problem buddy, everyone I know that makes them does it a little differently. I say give it a go and set it to your preference. The ones I posted are the plain type, some like to mix peas, chopped meat and tomato sauce in the rice, but I'm not a fan.
