Medium Well. I like the blackened outside while still having some slight pink inside. Also, if you get the outside black you can eat some of the fat. I won't touch the fat on something meduim or medium rare, it's too stringy and gross.

Medium Well is dangerous though, because if the asshole in the kitchen doesn't know how to cook steak properly you're getting a well done, and well done is almost always too dry and sometimes tough.

It depends on the place I am eating. Most of the time it is medium rare. At a good steak place I will go rare and at a place like Outback I will go medium.

I'll usually go medium, to medium rare at good steak places (or if I'm grilling my own steaks and I got a good one.) I just cant' bring myself to go fully rare.

My dad, God rest his soul, wanted his steaks beyond well done, into actually burned. I know when I grilled steaks for him, his stayed on the grill several minutes longer than anyone else's. I have no idea where this came from, if it's some old person thing from a time when you couldn't trust the quality of meat and you had to burn the shit out of it to stave off salmonella. But the thought of the meat having any sort of pinkness or being "cold" in any way repulsed him.

Ruths cris here in atlanta has to have the best steaks, I also have a memory of a great steak place when I worked in concord, mass something like old 98 or something like that, it was the first time I had a steak rare.

I think this is the best answer so far. Wagyu beef barely needs to touch the heat. Filet is usually med. rare. I go medium for most anything else. I like marbled beef, so it needs to get enough heat to get that fat moving.

Rare or medium rare. I usually order rare when I go out to eat because most people will over cook it anyway. There is really no point to eating steak if your going to order it anything over medium. I wont eat a medium steak but I can accept people that do. I once knew someone who liked his steak burnt to a crisp with ketchup on it... Its sad to even think about....

I get three cattle every spring and let my kids name them. In the fall we go out and they pick the one we eat. This year its Lisa. She should be done at the locker this week.. Nothing like knowing where you food comes from.

oh hell yeah, this Cruise Line (Holland America) has their 5 star restaurant that uses a 1600 degree searing device, I have them make it rare then, crispy on the outside mooing on the inside, its fucking heaven

I've had it. Chances are that if you think it sounds like something you would enjoy then chances are you will. It pretty much traps all the flavor and juices inside the steak. :D

I consider this quite an accomplishment considering that because my dad absolutely had to have his well done (read: almost burnt to a crisp), that's all I ate as a kid. It took me forever to even realize you could order a steak medium well, even.

One of my favorite parts of Anthony Bourdain's book Kitchen Confidential is what they do to steaks ordered well-done... the most important part being that they actually seperate the better pieces of meat - and keep a stock of the worst cuts - and use those only for well-done.

So basically, if you want it well done - order a piece of chicken because you are wasting your money.

And if the grocery store's meat department or produce department smells, don't shop there. That's just disgusting.

When we lived in the apartment, I boycotted my regular ShopRite for a month once because the chicken smelled rotten and I almost puked in the middle of the aisle and refused to purchase any meat at Stop and Shop for the same reason. If I can smell it before I see it, I am NOT spending my hard-earned money on it!!

Now I refuse to buy meat, produce, seafood or milk at the ShopRite near me because the meat section reeks, the produce section is slimy and the milk smells funky. (Oh and the store is dirty and ill-organized so heavy shopping days are cause for anxiety attacks.)

when i was at gibson's in chicago i had to send my steak back twice because both times it came out medium rare. i was lucky enough to get a pint of makers mark on the rocks for my wait.

I went out to a nice place in Boston with a ham and egger. She asked for A-1 and I just burried my head in my plate in embarrassment. I had to leave a big tip to make up for it.

I get my steak medium, my burgers medium well.

I like french fries or a baked potato with my steak.

I'm actually not eating steak until we go out to Arizona, there are some killer places out there.

My two favorite places for steak here in AZ (assuming you're coming to PHX) are Durant's and The Stockyards. Durant's is awesome because you can walk through the kitchen to get to the dining room and the interior is plush red gangstery. Oh yeah, I take mine rare. I should be able to smell burnt fur. And I always eat the fat. That's the best.

Blue is pretty much rare. They sear the edges (extremely hot skillet or grill) and it is just a step below rare.

It is the humane equivalent of just going to the butcher and biting into half a cow.


edit: I've ordered blue steak a few times. Usually, I see it as aged tenderloin or a ribeye being offered.
