Maybe this was covered in the edge or middle thread....i didnt read it cuz the answer seemed so obvious that there could hardly be discussion (edge, of course!) so i hope im not duplicating.
Do you ice your brownies? It seems crazy to me. A brownie is so perfect as is, that it seems to ice it would be overkill. I like a nice, thin, chewey, no nuts, no icing brownie. I can tolerate a lil powdered sugar on top for effect, but no more than that.
i would think only a maniac would ice a brownie, right? :tongue: ;)

The truly mentally insane put nuts in them.
To destroy something as perfect as a brownie by putting those bitter, foul things in them should be considered a crime.
Ditto for chocolate chip cookies.

Chocolate brownies with good chocolate icing can be a real treat. They are also so rich that you don't have to eat much to satisfy you.
You can also use the icing to combine flavors without compromising the purity of the brownie. Coincidentally this can allow you to create several flavors out of the same batch of brownies. Peanut butter, Kahlua, and Mint are a few of my favorites.

HTG and I are apparently soul mates because we both like plain old edge brownies with no frosting and no nuts.
As I become more of an Old Fuck, I find it easier and easier to overdo it with sweetness.

Icing on brownies is disgusting. Hard icing is ok but only if the brownies themselves are cakey. Of course it'd have to be chocolate icing.
Oh and nuts in brownies is blasphemous. Awful. Chocolate chips are acceptable.

i dunno whats funnier. the spelling of "sead" or that sheepy commented about the overbearing taste of seed.
all i wanna do...when i bite into the brownie...is taste brownie. and maybe powdered sugar. you want to top it? warm it and then top it with vanilla ice cream, whipped cream, and touch of hot fudge. But the fudge is for the ice cream, not the brownie.

are you using a double boiler? if not, you definitely should. Also, i never use Oil, i use butter. since the THC works better with Butter.
strain the weed from the butter with a cheesecloth. you dont need the weed because the thc is already in the butter. but if you want to keep it in there, thats your call.
no burning. no weird taste. just good old special brownies.

Seriously though. That "thing" that they have at apple bee's is the only good thing there.

And i like nuts on things. They make the world go round.
I am finicky about nuts in baked goods.
There's a time and place for nuts ... like as part of one of those gold-wrapped Ferrero Rocher chocolate truffle thingies that they over-hype this time of year or maybe in a spinach salad or in trout almondine or something like that, but keep 'em outta my brownies!

But I have NEVER ate one of those things. Ferrero Rocher's. They dont look that good to me.
But then again I am not a chocolate person. But I like my brownies under cooked a bit too.

If you're not a chocolate person, the Ferrero Rocher thingies are going to make you throw up a little bit.
My brother isn't a chocolate person, either. This is OK; I love him anyway.

I put chocolate chips in my brownies and it's HEAVEN!
The only acceptable way to incorporate nuts is to shave them and pour them on top right before you cook them.

I'm still playing with my from-scratch baking.
However, my sister-in-law is the desserts queen. I think she got all her recipes from Mark Bittman's How to Cook Everything, which was just reissued in a 10th anniversary edition, so you may want to start there.
I can't remember if Alton has a brownie recipe, but if he does it should be in I'm Just Here for More Food, which is his baking book.
