View Full Version : Homemade Soup recipes & recommendations
It's fall, there's a chill in the air (some places)...most of us starting thinking about nice warm soups.
Soups to me tend to be made or broken on seasoning and that little extra add-in of something.
So....whatcha got?

Don't worry, he assumes we are all talking about him, at all times.
Quick crab and corn chowder.
Fry up some bacon pieces or fatback in the bottom of a big pot.
Throw in handfull of chopped onion, chopped red pepper, chopped celery, chopped potato
Sprinkle on Old Bay, cook till softened.
Sprinkle couple tablespoons of flour, cook for a couple minutes.
One container of chicken stock, one container of half and half. Sprinkle on more Old Bay.
When heated through, dump in pound of crab meat, and couple handfulls of frozen corn. Heat through.
Takes about half hour, forty five minutes.

Imitation crab meat sucks balls.
To save some bucks, you can use "Special" crab meat, it's cheaper, and the lump meat will just break down int he soup.
And help a guy out, will you?

Sounds great, although have you ever tried using a Cayenne pepper and salt mixture instead of Old Bay?
I've found that to be a preferable substitute to Old Bay, and it gives it a bit more of a Cajun twinge to it.

What jokes???
Since when did every four letter word beginning with M becoming confusable with Marc become a joke? And you reference a thread I've never even seen.
Either I totally missed out on something or you guys have lost your mind.
8 slices of bacon
1/2 of a regular-sized white onion, chopped.
3 cups of cubed potatoes
1 cup water
2 10 oz cans of cream of chicken soup
2 soup cans full of milk
1 tsp salt
To construct:
Cook 8 slices of bacon. When done set aside.
In soup pot, use grease from bacon to brown the chopped onion. When onion is browned, add potatoes and water (fill water to even with potatoes, a cup is only a general rule). Cook covered for approximately 15 minutes on medium + heat or until potatoes are tender.
Uncover soup, blend milk, chicken soup and salt into soup and place over medium so slightly less heat. Then take crisp bacon, crush and sprinkle into soup. Let simmer for approximately 30-40 minutes.

French Onion Soup
10 medium yellow onions (about 4 1/2 pounds) , halved, peeled, and thinly sliced
2 tablespoons olive oil
2 tablespoons sugar
1 teaspoon dried thyme
Coarse salt and ground pepper
3 cans (14 1/2 ounces each) reduced-sodium chicken broth
3/4 cup dry red wine
FOR CHEESE TOAST (OPTIONAL)
4 slices toasted multigrain bread
4 ounces sliced Swiss cheese
Directions
Preheat oven to 450 degrees. In a large roasting pan, toss together onions, oil, sugar, thyme, 2 teaspoons salt, and 1/4 teaspoon pepper. Cover tightly with foil; cook until steamed, about 30 minutes. Uncover; cook, stirring every 30 minutes, until onions are golden brown and caramelized, 1 to 1 1/4 hours more.
Transfer onion mixture to a large saucepan (reserve roasting pan); stir in broth and 6 cups water. Bring to a boil; reduce heat to a simmer. Cook until liquid has darkened, about 20 minutes.
Meanwhile, deglaze the roasting pan with wine: Place the pan over medium heat; add wine. Scrape bottom of pan with a wooden spoon or scraper to loosen any browned bits. Simmer until reduced and syrupy, about 2 minutes. Pour liquid (and browned bits) into soup. Season with salt and pepper. (If freezing, let cool completely before transferring to airtight containers, leaving 1 inch at top.)
If desired, make the cheese toast: Heat broiler. Place bread on a baking sheet; top with Swiss cheese. Broil until cheese is bubbly and golden brown, 2 to 3 minutes. Cut each slice into four triangles.
To serve, divide soup among bowls; garnish each with two triangles of cheese toast, if desired.
