I've recently taken over the Sunday Market for my Father-In-Law in Brooklyn. I realized with the combination of City Dwellers and Foodies on this board, maybe some would be interested in checking it out. We sell Grass-Fed and Finished Black Angus. Everything from No-Nitrates Hot Dogs to Porterhouse Steaks.
Sundays I will be at the Carrol St. green market from 8:00AM till 3:00PM (sometimes we pack up a little earlier if it's slow). It's Carrol St. between Court St. and Smith St. We are the only meat vendor there and usually located between the Milk guy and the cheese guy (closer to Smith St.). Come by and introduce yourself and check out any of our stuff.

For Manhattanites, my Father-In-Law sells at the Union Square Green Market on Wednesdays and Fridays.

Very cool ... make sure you introduce yourself! And Check out the website to see what cuts we carry and our price list. Often, I don't have certain cuts on Sunday since we're a pretty low production farm. Skirt Steak (for example), is always sold out before Sunday since a Cow only has two skirt steaks available and we only process 3-4 cow a week, I can only get them special order. I only bring this up so people don't get their hearts set on something specific.

I sold two Livers and a Heart before 10:00AM yesterday ... people are in to that Dr. Westin A. Price diet and it makes me happy because the Hearts, Kidney and Spleen used to be thrown away.

I know ... not that I am used to it I don't want anything else. My wife made Chili last night with our ground beef and organic tomatos / vegges .... it was outstanding. Today i have bologna and cheese on wheat for lunch ... blech

the problem is I live in an Apt. so i dont have a BBQ, will have to find some I can cook indoors

What's interesting about the Kielbasa is that it was never something we planned on stocking. Our Butcher took it upon himself to make it, and I don't think we have had another batch made. I am suprised it even made it on the website. If you know you're going to stop by next weekend, I will see if we have some left and make sure it gets packed up and sent to me and I will hold it for you.
Also ... just you all know, all of our meat is flash frozen in Cryovac immediately following butchering. It's brought down in a refrigerated truck in coolers, and then dry-ice is used to keep it frozen. So when you come see me, you're buying frozen meat. Most meat you buy in the store has already been frozen once (although they dont' tell you that) ... and our will re-freeze just fine if you need to (although why would you want to wait :laugh: )

We have a guy who buys multiple packs of our premade burgers each week. He swears they're amazing on his George Forman, or eltric skillet. We also sell Rib-Eye Mini's and sandwich steaks (cut from London Broil I believe), which are both great in a pan with onions, peppers and cheese. We sell a Chuck Eye Steak which is amazing if you lightly season, put in a 200 degree oven for 20 minutes, then sear in a hot pan to finish it - perfect med-rare inside and seared outside. Brisket and Short-Ribs are GREAT when braised all afternoon. The all-beef sausages are out of this world and cook up great on a grill pan or skillet ... and my favorite thing about them is that if you like your steak med-rare, you can have your sausage med-rare since it isn't pork and doesn't need to be cooked all the way through. I am sure we'll find somethng for you sir.

I don't know if this is Sacralige to you or not ... but we do sell All Beef Bacon (although i was sold out last week) ... No Nitrates, cut from Brisket, seasoned and smoked. It defintiely doesn't have the same texture as back, and won't cook up as crisp ... but it is very delicious and a real hit with customers who cannot eat bacon because of the Nitrates or they don't eat pork. I don't believe there is a pork guy there. It's Vegge's, Cheese, Me, Milk, Bread, Fish, More Vegges, Honey ... and one or two more but I don't think any other meat of any type there.

Don't get me wrong ... just cuz I sell beef doesn't mean I cannot appreciate other forms of meat ... a properly done pork rib may be the perfect food in my mind.
That said, not only is our meat delicious, it's as healthy as you can get. Omega-3 Fatty Acids (almost as high as Wild Salmon), no hormones, no antibiotics, no grains, no herbicides, no pesticides. The only thing that our cattle ever eat other than grass is their mothers milk.

I have done it with Merlot and rought grained Dijon Mustard, came out awesome.
You should put a link on your website to either GQ or Mens Health, I don't remember which one, but they had a whole article about Grass Fed beef and how much lower in cholesterol and how much better the fat is in it then corn fed beef.

We usually have the short Ribs (best for braising), but we had someone request the Baby Back Rib, so we cut and packaged them and sold them this week. I haven't tried them and I am definitely intrigued ... if I didn't sell out I was going to take a package home myself. If you're really interested in them, let me know and I will see if they can be available again.
I will be there on the 19th ... definitely check out the website and the price list ... some people are a little sticker shocked when they see a 1 pound Rib Eye ends up costing $23, or people have come to buy a lot and didn't have enough cash ... we don't take cards.
Bring on any questions you have ... if I can't answer it myself, I will find out.

Awesome ... thanks ... we're always looking to spread the word. not only because it's good for business, but we really believe it's the right thing to do. And I will definitely try that next time I the ribs ... I like the Mustard idea.

this is the recipe, I just changed it by adding in some garlic. I also do not eat it the night i make it, I put it in the fridge and then scrape off the fat that rises, and then after reheating it is awesome. You can also use good canned tomatoes instead of the fresh ones
