I had never tasted this delicious treat before.
I would pass it by in the frozen food aisle, sneering at it's over-processed meatiness.
Until one day, my husband went shopping and brought it home.
Delicious philly steakness. Grease. I LOVE YOU STEAK-UMM! I'M SORRY I EVER DOUBTED YOU!

Steak-umms or boy scouts?
Depends on how thin they're sliced.

Liz and I tried a cheese steak experiment a few weeks ago. The meat was too thick, so it was too chewy to eat as a sandwich.
Once we get the bigger kitchen, or a grilling area, I'm going to attempt to make cheesesteaks. I used to be a "grill man" for a pizza place I worked for back in the day, and my steaks were DAMN good.

You have to see if your butcher can give you the chain meat. That's the cut (I use the term loosely) that originated the philly cheese steak.

I thought the problem was that there was too much meat and I didn't chop it (you try chopping meat on a nonstick grill pan) ... you have to get your story straight.

The way to do this properly is a thin piece of meat that is frozen. By thin, I mean no more thick than five sheets of paper. Like a steak-ummmm.
I then use two metal spatulas and I have a large working area. As the meat cooks, I pull it apart using the spatulas, adding spices and adding onions to cook on top, then cheese.
This takes me back to when I lived down the shore. Hard to believe it was so long ago.

Or the ultimate, a McRib covered in Steak ums?
BTW the McRib has made its way to Ohio, $3.33 for the extra value meal

Yup, just ask for the trimmed chain section from a beef tenderloin... Got this from Alton Brown: http://www.foodnetwork.com/recipes/alton-brown/chain-of-bull-cheese-steaks-recipe/index.html

Also, I think you need to do a cheesesteak in a cast iron pan. Just a thought. Non-stick doesn't work unless it's a two-burner griddle.

If I HAD my cast-iron 2-burner grill/griddle, this would be a moot point.
But I don't.
So don't blame the pan, blame yourself.

We live in a small apartment, so when we got married, I "allowed" her to open some of our gifts, like a waffle iron and some other stuff, but I told her point blank that NOTHING else gets opened until we get a house a decent sized kitchen.
So everything's been sitting in my parents house for the last 18 months.
Our biggest fight of 2008 happened on our anniversary, when she wanted to open china gifts up and I put my foot down that NOTHING gets opened.
When Casey was lamenting that all of her wedding stuff got broken, I rand around our apartment and said "SEEE? SEEE???????"
Of course, I still want to get that cookbook, "Brad Delp's Down Home Grillin'."

Pretty much everything seems to taste better from a cast iron pan. How about substituting cube steak for the steak you want to use in the sandwich? You can slice it very thin, and it is tenderized already.

I just recently started eating them again. I needed one hoagie roll for something else, so I bought the Steak Uums so the other 5 rolls wouldn't go to waste. I'm hooked.
They gave me minor trauma when I was a kid, though. My mom said I could make a sandwich on my own, but I could only use ONE Steak Um. You know how one Steak Um is actually two thin slices of meat? I thought that was two Steak Ums. I begged and pleaded with my mom to let me have two (she didn't know about my misguided interpretation), but she insisted I could only have one. I ended up totally mutilating it trying to separate those two incredibly thin slices of meat.
