I got some good friends from Australia who own a restaurant here in Phnom Penh specializing in English food (and they do it well, even though it is English food) and they asked me today what makes a good Philly cheesesteak sammich. I'm really a west coaster so what the fuck do I know? But I knew you just where to ask.
So they've got a great Cambodian cook who can take some simple instructions and recreate some incredible food replicas, (she invented the best veggie burger I've ever had and I was a half-assed vegitarian for a year), so you guys give me your best Philly cheesesteak instructions I'll pass them along and get a good sammich on offer here in the asshole of the world. We may have to tinker with the ingredients as some things, like cheese, are expensive here as they aint local, but let's give it a go.

high quality thinly sliced beef
do not use shitty minute steaks or anything, you need good steaks to make it not chewy and disgusting.
also i like Mozzarella instead of provolone

However, according to Pennsylvania Governor and former Philadelphia Mayor Ed Rendell, cooks outside Philadelphia cannot produce an authentic Philly cheesesteak because, "first, they use good meat. You need the fattiest, stringiest meat to get a proper taste... The second mistake is, they use real cheese. Real cheese doesn't melt like Cheez Whiz... And third, when they fry their onions, they actually drain off the grease. You can't do that."

Provolone is the way to go, but American will do as well.
Cheese whiz is what you get at those hack tourist places like Pat's & Geno's.
Make sure they chop the beef, not shaved, as many places will do. Chop it with the side of the spatula, over and over until it's a fine fried pile of beef, brown in color but not crispy. In the middle of chopping, throw on the cheese, chop it up with the beef.
Throw on the fired onions if you want.
Scoop it all up with Italian bread. I don't know what kind they have over there, but make sure it's not too large. You want the steak spilling out of the roll, so they after to eat it over the wrapper or plate to catch the extra beef.

Thin-sliced Ribeye from the local butcher (or even pre-cooked prime if you are lucky enough to score some), coupled with green peppers, onions, and cheese whiz on a fresh baked hoagie bun from the local bakery.
Lucky for me, I have a butcher, bakery, and produce stand all within a block of me.

I don't mind a lesser steak from time to time. The fat content adds some flavor. But to say you must use Wiz is insanity. A good white American, or even Swiss is delicious. Also, not draining the peppers and onions just makes for a grease sandwich, not a cheesesteak, Too overpowering. Let the dopes from philly say what they will.
I'm also a fan of the pizzasteak. A little marinara sauce and mozzarella. Delicious.

as weird as that sounds i can see that not being bad. This guy I used to work with would always get bagels with creamcheese and tomatoes on it, so I tried a piece one day and it was REALLY fuckin good.

The wife has always gotten Toasted Everything with Scallion Cream Cheese and Tomato ... I thought she was nuts until I tried it, it's pretty damn good.
We make our Cheesesteak pretty traditional. Thin sliced Rib Eye, chopped on the griddle, grilled pepper and onion, White American. I occasionally throw in some sauted Mushrooms.

Scallion Cream Cheese and Tomato ... I thought she was nuts until I tried it, it's pretty damn good.
Now that you added Scallions it does sound good. I may just give this cheesesteak a try.

i probably eat a pizza steak once a week...usually a saturday afternoon hangover lunch...its such a delicious runny greasy mess

One of my favorite food people is Anthony Bourdain and his mantra is the 'nasty bits.' He says real cuisine is people who take the lesser parts of the animal and turn it into something delicious. I have seen him eating beef tounge tacos in mexico, an awesome looking bone marrow stew in Singapore, and stuff like that. Stuff that people in this country usually throw away or give to their dogs.

You almost sent me into cardiac arrest saying you liked steam-ums, but I agree with mayo. Steak, Provolone, May and onions. That's it and that's that.
I also prefer sliced beef to chopped. I like the texture more, plus being all chopped up like that makes me think you're hiding something.
Pat's, Geno's and Jim's all suck BTW. I have sung the praises of Tony Luke's here many times before, and will continue until I die (probably of a heart attack).

I've had "authentic" philly cheesesteaks, but one of the best I've ever had is Voltaco's in Ocean City, NJ. It's not only the quality of the sandwiches, but the bread. The bread is a big factor.

fuck me running, this thread is making me hungry! i lived in a suburb of philly for a few yrs and i would go to a place called Lansdale Pizza and i swear to god they put marinara sauce and bacon in their cheese steaks, it was so fucking good i make them @ home now, here's my recipe:
rib eye steaks, grilled and chopped
onions, diced
mozzarella and provolone cheese
marinara sauce
bacon sprinkled on top after you put the sammie together
lightly toasted hoagies

A place I go to makes a cream cheese spread with sun-dried tomatoes mixed in it...very nice.

As for the steaks...one thing that I know is that if you put ketchup on a Philly steak; Ronnie B. will come and gut you like a fish.

That was my introduction to Luke's as well. Needed it for that trip back to the city. I had some garvone friends who doubled down on cheesesteaks before AND after the shows (with mozzy and curly fries both times).

I'm watching this special on TLC called "I eat over 33,000 calories a day" and its about the people so fat that they can't leave their bed (or barely be able to walk). Anyone, this one fucking bitch, she eats sandwiches of "Ham, Mayo and Banana". That is easily the grossest food combination i ever heard in my life that someone would legitimately eat! Anyone else hear of this?
