I am now into watching Ramsay's Kitchen Nightmares and TOP GEAR.
They are unbelievably good. I am going to looking into a lot more but that is what I am on now. Top Gear being my favorite so far.

British t.v., in general, has more faith in the sense of humor (or humour), intelligence, and overall sophistication of their audience. My wife worked for BBC America when they first brought over the Office. Many in the US t.v. industry and especially the American sponsors that thought the original English office was too sophisticated for the US. It was a huge gamble to bring that show over. This is one of many examples. For the most part, US t.v. executives think the majority of Americans are idiots. Thankfully HBO and cable are proving them wrong.
No offense to the UK, but when I stayed with my chicks relatives in Manchester there were some pretty awful shows. Coronation Street and Diagnosis Murder to name 2 that seemed to be on constantly. X-Factor was pretty entertaining.
EDIT - The comedies that were on were very funny, but the dramas were all over the top.

They also know when to say when in the UK. TV series usually don't last that long (with some exceptions of course). Look at Fawlty Towers -- perfect TV and they stopped after 12 episodes.

I think you're seeing the best of the best of English TV. They have plenty of crappy shows, but they don't put those on BBC America.
Who wants to be a millionaire was a British show first, and it's certainly not furthing the advancement of the human race...

Having state sponsered TV helps, see also Canada.
Although there is some unbelievable shitty UK tv, AND you get a lot less content plus more time between series. It's a trade off.
Also, really trashy reality TV started in the UK. It's funny that people want to act like thats a really ugly american thing.

There are great British shows, but try and find more than a few good ones in a row on BBC. They have some horrible X-Files rip off that was running after Kitchen Nightmare last year. Bloody awful. That talk show stinks also.

My most recent "love it" British show is Little Britain. I have noticed however that they are going to be doing an American version with the 2 main characters, I hope it doesn't blow too badly. I know for a fact that they won't be able to get away with half of what they do on British TV.
Look at the awesome Canadian show Trailer Park Boys...that lasted only a very short time on the US network it was on. It seemed like they bleeped out every second word because of the swearing and it just made it impossible to watch.

They have Cornwall and depressed Mersey River towns. Areas that are very like "red states" in terms of economic depression, core values, etc.
No excuse.
That they don't have Hollywood is a better answer. Most producers are morons, therefore they only greenlight moronic pap.
