I always use it when i make risotto... topping off at the very end of the cooking process. I love the strong aroma and subtle flavoring it provides. Used sparingly, of course, because this stuff isn't cheap.
I haven't really used it on my other dishes yet though...
Does anyone else use this? or any other kind of 'fancy' oil?

wow i was just going to post this exact same thread this weekend! my mom got a gift basket with all little bottles of Truffle oil. White and Black truffle oil, and whole black truffle and some other stuff. she gave it all to me, and now I am stuck trying to figure out what to do with it.

I like to use Spotted Owl oil on my baby seal testicles - its MAAAAAAVALOUS.

saute some onions with wild mushrooms, put it on flatbread with some figs, serrano ham, melt some manchego cheese on top, top with toasted sliced almonds and drizzle with truffle oil...the best thing EVER...

just posting this because I had no idea what truffle was, other than chocolate truffles which i just found out is just named that because the chocolate is shaped like a truffel.
my girl does a lot of cooking so I'll ask her if she's ever used this oil
A truffle (IPA: /ˈtrʌfl̩/) [1][2] is the valuable and highly sought-after, edible fruiting body of a group of subterranean ascomycete fungi of the genus Tuber. All truffles are ectomycorrhizal and are therefore found in close association with trees. These are the only "true" truffles, however, the term has been applied to several other genera of underground fungi around the world.
The ascoma (fruiting body) of truffles is highly prized as a food, their smell has been described as similar to deep-fried sunflower seeds or walnuts, although it has also been described as "a foul aroma."[3] Not all people are able to smell the odor of this fungus. People have noted that water that truffles have been soaked in can taste similar to soy sauce. Brillat-Savarin called the truffle "the diamond of the kitchen" and praised its aphrodisiacal powers. While their aphrodisiac properties may be unproven, truffles are nevertheless held in high esteem in French, northern Italian and Istrian cooking, as well as in international haute cuisine.

A vinaigrette with olive oil, truffle oil and champagne vinegar is delicious. Add some S&P and Lemon juice, it's great on grilled/steamed veggies and salads.
