Last week hubby and I went to Spring Lake for a vaca. We ate at a Caribbean restaurant. I tried plantains for the first time. Does anybody how I can make chips from them? I totally loved them.

8 to 10 servings
Ingredients

* 1 1/2 teaspoons fine-grained sea salt
* 1 1/2 teaspoons grated lime rind
* Peanut oil
* 4 green plantains (about 1 1/2 pounds)

Preparation

Combine salt and lime rind; set aside.

Pour oil to depth of 2 inches into a large Dutch oven; heat to 360°.

Peel plantains; slice plantains lengthwise very thinly, using a mandoline.

Fry plantain strips, 4 or 5 at a time, 30 seconds on each side or until golden. Drain on paper towels. Sprinkle immediately with salt mixture.

i used to make them a lot but havent made them in forever.



cut the plantains really thin or even better if you have a mandolin.

in a bowl mix some coconut oil, vegatable oil, & salt. (chii pepper too if you want a little kick)

toss them in the bowl until they are covered and place them on a greased baking sheet.

bake them for 20-25 min. turning once.

wala!

I used to eat a bag of plantain chips every now and then when I was working in Jersey City. The bodega across from the job where we got our break stuff had them.

They're OK, not great. Maybe cooking them from scratch is different but I'd just rather deal with potatoes and bananas seperately.

Type in Peurto Rican recipes in google, you'll get lots of results.
If you make them thicker you'll have tostones, yummmm

I hate them. It's never what I expect.
I've been having bananas since I was an infant. Throw in the oily and salty and it just isn't right.

Great choice of the flavoring. I may try ancho or pasilla. I have ancho peppers in the garden. Thanks guys. You've given me alot options that I may mix it up. :thumbup:

I saw Alton Brown do this on Good Eats and I can't wait to try it:

Fried Plantains

2 cups water
3 cloves garlic, smashed
2 teaspoons kosher salt, plus extra for seasoning
1 1/2 cups vegetable or canola oil
2 green plantains


Combine water, garlic and salt in medium size glass bowl and set aside.

In a large (12-inch) saute pan, heat oil to 325 degrees F. Peel plantains and slice crosswise into 1-inch pieces. Carefully add plantains to oil and fry until golden yellow in color, about 1 to 1 1/2 minutes per side. (The oil should come halfway up the side of the plantain). With a spider or slotted spoon, remove the plantains from the pan and place them on a cookie sheet lined with parchment paper, standing them on their ends.

With the back of a wide, wooden spatula, press each piece of plantain down to half its original size. Then place the plantains in the water and let soak for 1 minute. Remove and pat dry with a tea towel to remove excess water.

Bring oil back up to 325 degrees F and return plantains to pan and cook until golden brown, approximately 2 to 4 minutes per side. Remove to a dish lined with paper towels, and sprinkle with salt, if desired. Serve immediately.

Clever Beerbandit ...very clever. I've actually only made them using Altons recipe (see ANC's post above), and they're great. I am very interested in futool's chip recipe above, I will try it out (the Lime salt looks like it would be a good seasoning).

When Babybandit was in the hospital we had breakfast across the street in Wash. Heights at the Caribbean place. Mashed plantains are Yummo!:wallbash:.

I wonder how'd they'd be in Shepherd's Pie.

Using the "head agains brick wall icon" DOES NOT excuse you from using the term "Yummo".

Now fry up some Plantains in EVOO, then put on bread to make a nice Sammi.

Certainly. There was a time when we all watched Transformers. But we all grow up. Have you tried to watch that show on DVD? Oh to be 10 again.

I like the sweet plaintains better than the salted ones. There is this spanish bodega style restaurant on Ocean Ave in J.C. N.J. that has the best puerto rican/dominican food I had that was not homemade.
