I was looking for cold cuts for sandwiches the other day, and came across Pancetta. Looked tasty, so I bought a half pound. Made two sandwiches on hoagie rolls, and used the whole package of meat. Tasted good, but it was real stringy, so I googled it to find out how the fuck people eat it because it's so stringy. Well, turns out it's raw, barely cured meat.

Should I worry?

I think if it was kept cold since it was made and from when you bought it until the time you ate it, you are fine. If it was festering on the back seat of your car for several hours while you shopped in the mall before you ate it... I think you would have a problem. While you were googling it, did you also google if it is associated with illness?

Although I think you should be fine ... Pancetta is Italian Bacon ... it's basically the same exact thing as bacon minus the smoking process, so keep that in mind if you feel ill over the next day or two. Maybe Dr. Steve could weigh in. I have eaten it raw accidentally as well. It's a delicious alternative to bacon ... in fact I am sure it's Hippos favorite Italian Food. Prosciutto is a great similar italian meat that you can eat without cooking.

The chances of getting sick from raw pancetta are small but not nil. You should be fine, but if you do start feeling sick (nausea, vomiting, diarrhea), get to your doctor.

And stop eating raw pancetta. Not worth the gamble. And it tastes real good cooked. Especially good as a base for a pasta sauce.

Now I'm starvin.

Cunty's right on this one. it's salt-cured so it's ok to eat raw, and it will keep in the fridge for a good while. But as it is barely-cured, it won't keep forever. I have a great recipe for a balsamic vinagrette with pan-fried pancetta that goes great with with Gnocchi.

I am not sure I would eat it on a hoagie in pounds but in Europe most cols cuts are dry cured meats.

I think the real problem is that an Italian hoagie is anything but what an Italian person would eat... or a German... we don't pile on meats and cheeses the way it's done here in the us

My family always takes apart sandwiches when they come here, we tend to just cover bread with thin layers of cold cuts instead.


So don't worry, if you are not dead from this yet then you will be soon from a clogged up artery or just become another obese American.

Curing meats does not kill the trichinella worms (not tapeworms) inside of the cysts that contain them in infected meat. Fortunately, these basically don't exist in commercial pork these days because of strict regulation of feeding practices. 12 idiots a year who don't realize they got the worms from some raw bear they ate at a drunken redneck gangbang aren't a good enough reason to ruin a nicely cured pork product by cooking it.

prosciutto is intended to be eaten as-is, pancetta must be cooked. it's more akin to bacon.
