This recipe pleases most.

Start with some chicken. Skin and bones are preferred, but healthier cuts can work as long as you use good chicken stock later on.

Brown chicken in some olive oil in a decent sized skillet. Remove chicken, not necessarily cooked completely. Brown a chopped onion or two in the pan. Have flour and chicken stock ready. When onions are good, throw some chopped garlic in, cooking until just fragrant. Add several tablespoons of curry powder and more olive oil if necessary, cook a little more, then add flour to make a roux around the onions.

Brown the roux as desired, watching for burn, then incrementally add stock to make a thin gravy. Add chicken to finish cooking over a simmer, then remove to cool to touch. Shred chicken and add it again as sauce thickens.

Serve over plain white rice, and present your diners with a decent spread of timbales to spoon over the top, such as chopped tomato with lime and cilantro, diced cucumber in yogurt, chopped peanuts, shredded coconut, etc. Timbales I'm not big on include chutney raisins, mashed banana, etc. Get creative with the timbales. Umame flavors work especially well.
