I think the "everyone" depends on who you are, where you grew up and what your perception of a "cultural touchstone" movie is ...
For example, among the kids I grew up with, The Crying Game seemed to be a huge rite of passage. I have yet to see that.
I have not seen Predator or Alien (or either movie's sequels.)
I was in college before I saw the original Star Wars the entire way through, although I saw Return of the Jedi in the movie theater when I was a kid. (And made Jabba the Hut out of Play-Doh with my brother Ger for months afterward. And went to see the Ice Capades that starred the Ewoks. And made my parents sit through one of the TV specials that was supposed to have been simulcast on the radio so you could hear it "in stereo" but nobody else seems to know what I'm talking about when I mention it.)
I hadn't seen The Empire Strikes Back until ... 5 years ago.
I hadn't seen Pulp Fiction or The Godfather until I was in college.
It took me longer to see Reservoir Dogs.
What else am I missing? So far, it seems like it's just The Crying Game, but I know for a FACT that there are more!

You can skip the movie and read the book.
The book is MUCH better.
Even Sir Richard Attenborough and CGI dinosaurs couldn't save the film version of Jurassic Park.

Oh god.
I fucking HATE Titanic.
The guy I was dating at the time was/is obsessed with shipwrecks.
He'd advance-ordered opening-night tickets and went with one of his classmates who was equally obsessed with the wreck itself to see it.
Thankfully, I was spared the ordeal initially.
Then ... its run was either extended or revived for the Oscars and I was recovering from mono, so I relented. And also figured that seeing a movie called "Titanic" on a 13" TV was kind of silly.
My butt went numb it was so bad.
And, to make it worse, my roommate at the time bought the soundtrack CD ... and left Celine Dion on a continuous loop for days on end because she liked the song so much.
(When I was picking up dinner last night, I heard it on the radio for the first time in almost 10 years and got the shakes.)

This is a must see movie for me...but don't even try to watch the sequals.
As for the top 1000 grossing list, that first page is loaded with horrible movies....it's amazing how many stupid people out there pay for that crap.

off the top of my head, the only movies I have still avoided are the Freddy Krueger/Friday the 13th movies (and other slasher movies other than the first Halloween)

The Lord of the Rings and Matrix trilogies.
Saw all three LOTR movies - big fan. Huge Matrix fan and then the other two. Meh and less than meh.
I've also never seen a lot of the old classics. I just forced myself to watch Citizen Kane - I did enjoy it and tried to view it with an eye for the cinematography which helped. But never seen Gone w/ the Wind or Casablanca.

I haven't seen any of the Lord of the Ring movies, probably because there was so much hype surrounding them. I get turned off when there is too much hype. But I have read all the books, so I will eventually see the films.
I didn't see any of the Harry Potter movies. And I didn't see Lion King or Little Mermaid.
I did catch some of the Shrek movies which I liked.

I loved Jurassic Park when I was a kid, and basically did until I finally got around to reading the book. It really is one of the worst hatchet jobs I've encountered.

its because i was intimidated by how many versions were out there that I wanted to make sure I saw the right one. I didnt know which to get
Also my friends would always be like "You never saw the Evil Dead movies? I'll let you borrow them"...and then, I was never given them to borrow :(

A Nightmare on Elm Stree (http://www.imdb.com/title/tt0087800/)t, although it has a TON of blood and gore, is actually the best/scariest of the Freddy Krueger movies. The other ones are just violent and gory.
It's probably the best because it was actually written and directed by Wes Craven.

i saw 29 of the top 50. But I lost a lot because I never saw any of the Harry Potters, alot of big movies made recently i never saw (Transformers, Night at the Museum, I am Legend) and the only Star Wars films i've seen is "A New Hope" and "The Phantom Menace". I fell asleep during "Attack of the Clones" in theaters so I don't count that one
Edit: And I only saw the first "Pirates of the Carribean" and "Matrix"

I thought that I was one of maybe ... 15 people ... who found Fargo to be the single most uproarious movie I had ever seen.
It's a great introduction to the Coen brothers' brand of sick, dark humor.
I've since seen The Big Lebowski, Barton Fink and Miller's Crossing.
They've all got John Tuturro in them.
And Miller's Crossing has Gabriel Byrne in it. (I have had a crush on Gabriel Byrne since The Usual Suspects.)

I've never seen Hoosiers, which is an institution in Indy.
To make matters worse, when I was nineteen, I used to be able to hang at this bar called Plumps. It was owned by Bobby Plump, the dude from the story.
I met the motherfucker. Still haven't seen it.
I've also never seen Top Gun, but I have seen Hot Shots about 150 times.

I've never seen any of the Rambo movies, either. I'm only familiar with them because of Gremlins 2 when Gizmo suits up like Rambo. Oh, and there's this segment in UHF:

Same goes for Star Wars (didn't see it until college ... people tended to react as if they thought that was some sort of child abuse.)
Skip Gone With the Wind unless you love stories about unredeemable self-centered riches-to-rags-to-riches selfish bitches. (Ugh. Scarlett O'Hara may have been a tough bird, but her petulance and selfishness never change ... Clark Gable and Olivia DeHavilland saved that movie from being a total borefest for me. Also although Hattie McDaniel and Butterfly McQueen play racial stereotype-caricatures, they were insanely talented. Lastly, the woman who plays Aunt Pitty-Pat is one of the more enjoyable character actors of the day.)
Casablanca is another good flick ... between the great leads (Bogart & Bergman) the movie is stuffed with character actors like Peter Lorre and Claude Rains. Play it, Sam.

And Val Kilmer. Who has what is quite possibly one of THE gayest line/action combos ever recorded on film.
You don't see a movie like Top Gun for the plot. You see it for the above reasons.

i have a thing where i tend to hate these movies that are so critically acclaimed. maybe it comes from not seeing the movie before they hype, but good will hunting was one of them. i found it so incredibly boring. same for magnolia & no country for old men.

Because the only guy I knew growing up who had seen both is gay. He's a fashion designer whose early inspiration came from Jean Paul Gaultier's costumes for Madonna during the Blond Ambition Tour and GWTW.
Of the two, I prefer The Sound of Music ... Maria is a much more compelling character than Scarlett. And it has singing nuns. Who doesn't love singing nuns????

I do have to admit having not only seeing The Sound of Music but actually auditioned to be one of the kids when I was in grade school. Didn't make it though. Whew.
