I don't know how to core an apple - I keep just hacking at one that I have and it looks like shit.
What are the guidelines?

i take a paring knife and insert it around the top and bottom, making the shape of a stop sign. then i just push and it pops out.
or buy an apple corer, they work well

First, go to your neighborhood Bed, Bath and Beyond and buy a quality apple corer. Upon exiting, find a nice, young man of Hispanic descent waiting in the parking lot. Hand him the corer, and offer a bag of avocados as payment for coring your apple.

Avocados are a "superfood".
Who doesn't like avocados?
And, I hear they're good for constipation.

These are great - I swear by my apple cutter.
However, if I don't have one handy an old fashioned vegetable peeler tends to work well.
http://www.apartmenttherapy.com/ol-images/kitchen/uploads/2006_12_19VegetablePeeler.jpg
You need to have a sturdy one though - like one your Grandmother might have. You just stab down through the apple and either cut around the core or make a succession of "stabs" around the core. Since the blade is curved it makes the peeler ideally suited to cutting around the center.

The Honeymooners was really just the best. Pretty sure TV has been on a steady down hill slant since then. (except for Mash, the Simpsons and arrested development)

Avacados are about 10 times more expensive than apples so this is quite a flawed system.

I find this hard to believe with all the cheese you eat.
Since I got my apple corer for about $2 at Target, eating apples is a pleasure.

I would have said it depends on what you're doing with the apple.
The last time I had an apple as a snack, I cut it in half "lengthwise" and scooped out the core with a spoon so I could put peanut butter into the depression.
If you need the core out in a cylinder because you're doing something with the whole apples, have fun with that uni-tasker of a corer tool.
If you need an apple sliced and cored, slice it into quarters and then angle your knife to cut the core out of the quarters like Rachael Ray does. It's fast and doesn't involve stabbing.
Also, it works on apples of any size ... those round corer/slicer gadgets don't work on apples much bigger than my fist. And the slices are too thick for things like pies and cakes.

After seeing this post I went out and bought one of these last night. It works very easily. My first concern was that, though I do like to eat slices, I also used to love coring an apple and filling it up with peanut butter. Then again... I'm not 12 anymore. I can deal with slices.

not bad but...

This is the answer. It suctions to a smooth surface - you'll never eat more from one apple.

Now that the apple issue is resolved, what about peaches? I just peeled and sliced 5 peaches, and it was a MESS!

Peeled and sliced? Are you making a Peach Cobbler or something fancy man?
Sometimes I'll take a knife to 'em but when I eat peaches (which usually everyday) I just eat 'em like an apple and maybe hold a napkin underneath cause it gets messy.

Nothing as fancy as cobbler. Just sliced with cottage cheese. I can't eat them like an apple. I have this weird thing about the fuzzy skins. I freak out when I even think about having cloth come into contact with my teeth, and the peach skins is just too close to that feeling. Yeah, I know. It's weird. But it REALLY freaks me out. It's hard to even type about it!

Get a bird's beak paring knife to slice it:
http://ecx.images-amazon.com/images/I/21F7E77DZ7L._SL500_AA280_.jpg
The slices will be even because you use the curved blade like a pivot.
As for a non-messy way to remove the skins ... I can't think of one other than a regular vegetable peeler.
Or ... try a nectarine instead. Tastes similar, no fuzz.

I just drive my dick through it
Apples: Either an apple corer or I cut one into quarters and cut out the seeds
Peaches: I cut a circle around it then twist it in half then slice it up.
