Has anyone tried to make their own strawberry jam or preserve? I tried using splenda, but the strawberries were a little more juicy than I would have liked. Maybe I should have let them simmer longer?

Check out the Good Eats jam show (Urban Preservation 1: Jam Session (http://www.foodnetwork.com/food/show_ea/episode/0,1976,FOOD_9956_15894,00.html)) for more info about jams & preserves.

The issue with Splenda is that it doesn't necessarily behave the same way as sugar...in baked goods, you have to use a bit more liquid (or items that will keep your baked goods moist, like applesauce or mashed banana or oil or whatever) in order to get something that's edible.

In preserving, it's a chemical thing. Splenda doesn't react with the pectin (and you will need to add pectin to make your jam gel) like sugar does so you need to find a pectin that will (http://www.pickyourown.org/jamnosugar.htm).

And if you didn't know you needed to add pectin to begin with, you do now.
