I really like to experiment in the kitchen and one of the easiest foods to get creative with is meatloaf. It's something everyone makes a little differently... What's your favorite version?
I never measure in the kitchen, I go by my eyes and my taste. I rarely ever cook something that didn't come out the way I wanted it to. I'm talented, I know, but I'm mentioning it as an apology for not including any measurements below.
My mixture:
I like to use 1/2 bread crumbs and 1/2 brown rice, because I like mine a little bit more hearty. For a little extra fiber, and originality, I'll usually throw another grain in as well, like whole oat groats or kamut.
I like to throw in some finely diced green peppers and vidalia onions, sautéed briefly in some bacon grease (don't want them to be overcooked and lose flavor). I use 1/2 ground beef and 1/2 ground pork, maybe a little ground veal if I'm feelin' a little sassy. Of course I use a little ketchup, tobasco, and Worcestershire sauce, and of course, eggs.
I also like a few strips of bacon on top.
Today I'm making Meatloaf Cordon Bleu, one of my mom's favorite recipes, where you pat the meatloaf mixture flat, layer ham and swiss on top, then roll it up. I'll probably add some provolone for a little something extra.

I replace bread crumbs with Quaker Oats. I feel it gives it a better texture and taste.
I cover the meatloaf in a mixture of Sweet Baby Ray's BBQ Sauce (http://www.sweetbabyrays.com/Sauce.aspx), Frank's Red Hot Sauce (http://www.franksredhot.com/), and spices.
I put the BBQ sauce in a bowl or cup or whatev, and then I put just enough hot sauce in to cover the top of the BBQ sauce. Good amount of italian seasoning, garlic powder, and a dash of cayan pepper. Combine with the cayan pepper, I would balance the hot sauce. Too much hot can squash flavor (which I am sure you know).
I put some on top midway through cooking, but a SMALL amount. And then once it is finished, I put the majority of it on and let it bake a little longer to harden up the sauce. Some mashed potatoes or sweet potato mash, and it is really excellent.

mmmm.... leaf loaf.... (i called it that as a little tike)
haven't made this in ages... maybe i will make it this week.
Mama's Leaf Loaf Recipe:
1lb Ground beef or turkey
1 egg (if mixture is dry, add a 2nd egg)
1/2 - 3/4 cup italian style breadcrumbs
1/2 cup ketchup
1/4 cup worchestershire sauce
2 tbs dried oregano
2 tbsp dried parsley
salt and pepper to taste
bake at 350 for about 45-60 minutes

Meatloaf makes me SO happy. That mini-meatloafs with bacon sounds yumtastic!

I'm cooking mine for friends tonight and one of them asked me to wrap the entire thing in bacon... he was kidding, but I will steal that mini-loaf idea and surprise him!

Honey mustard is a definite possibility... I'm already in the mood for it from the hot dog thread. I usually like a little dab of sour cream on the side with my meatloaf, but maybe I will have a honey mustard flavored adventure today.

I had meatloaf too much growing up as a kid, so I'm never looking to have any.
BUT...
Meatloaf Cordon Bleu.
Sounds delicious.

I had meatloaf too much growing up as a kid, so I'm never looking to have any.
My mom made it a lot too, and for that reason I find "regular" meatloaf pretty boring... probably why I like to experiment and make it MY way. The meatloaf cordon bleu recipe only came after I was grown up and out of the house.
