I have 2 pounds of chicken breasts that I'd like to cook tonight. Does anyone have and good recipes they can recommend?

Not sure that I'm in the mood for anything in particular. Kid-friendly is a plus though.

Ok this one is set for 4 people but basically a chicken breast each.
Sticky Lime Chicken
4 chicken breasts
grated rind and juice of 1 lime
1 tbsp honey
1 tbsp olive oil
1 chopped garlic clove (if you like/have fresh garlic)
1 tbsp chopped thyme (again fresh is best but not a must)
Step 1 arrange the chicken breasts in a shallow roasting pan
Step 2 Stir all the other ingredients in a bowl and spread evenly (but dont use all of it) over the chicken breasts then put a little pepper on the chicken as well.
Step 3 Roast the chicken in a preheated oven at about 375 basting with left over sauce every 10 minutes for 35-40 minutes or until the juices run clear. The sauce will thicken and become delicious.
Step 4 Serve with vegtables (I prefer pea pods and corn/potatoes)
Always good so if you try it, enjoy.

Do your kids like chinese food?
If so, buy some Soy Vay Hoisin Garlic sauce, and cut the chicken up into bite sized piece. Marinade the chicken for about an hour.

Get a cookie pan and line with tin foil. Pre-heat the oven to 400. Put the chicken, and a good portion of the sauce, in single layer on the tin foil, and then put another piece of tin foil above and wrap the side forming a tin foil pouch surrounding the chicken. Cook for 20 minutes and serve with your rice and vegetables.
We made this last night and it's one of our favorites. Of coure, our two year old only eats fried chicken fingers so it was just for us.

Yeah, I have to lose a few lbs. and tighten up myself ... Oops, wrong forum.
Boneless - Fillet them to cutlet size, marinade in an Italian salad dressing for an hour or so and grill.
Bone in - Dry rub of salt, pepper, garlic powder and paprika and grill over indirect heat (~350 degrees) for about 30 to 40 minutes.
If you don't have access to a downtown grill like Bobby Flay, I got nothing for you.:unsure:

With a side of fried rice is awesome. Maybe you can try it next time. I use the indoor grill pan when it's raining. Awesome meal. I also do it with shrimp.

Real Easy.
Filet the breasts. Put a little sauce in the bottom of a cassarole. Add the breasts. Spice with garlic, oregano, etc. Add more sauce. Top with shredded mozarella. Seal the top in foil.
350 for 45 minutes.
Done.

Chicken Diego
I 20 oz can pineapple chunks
2-3 lbs chicken breast
2 T butter
2 cloves garlic
1 12 oz bottle chili sauce
hot sauce to taste
1 tsp salt optional
1 cup shredded cheddar cheese
Drain pineapple reserving 1/4 cup syrup and set aside. Cut chicken into bite size chunks Saute chicken in butter with garlic until golden brown. Combine reserved syrup, chili sauce hot sauce and salt. Pour over chicken cover, simmer 30 minutes Top with pineapple and cheddar cheese cover heat 5 minutes serve over rice

It's more geared towards whole chicken, or at least skin-on chicken parts, as you need that under-skin chicken essence to make a goud soup. But you could make some richer stock from a decent chicken base and it would turn out fine. Omit the spiciness if your kids are wimps.

Here's a good summery, south-of-the-bordery soup that I made up. Now my wife wants it more than I like to cook it.
Start off as though your making a basic chicken soup, sweat some onions in olive oil in your stock pot. Cube up some chicken breasts and throw 'em in there to brown. Some diced red bell peppers, carrots and celery won't hurt anything, either.
Finely dice an appropriate amount of serrano chiles and put it in. We like it nose-running spicy. Towards the end of the saute stage, throw some garlic in there. Saute just until the garlic becomes fragrant, then deglaze with a little chicken stock for a second, then drown the whole mess in more chicken stock.
You can add all kinds of vegetables, and when you add them depends on their hardiness under boil. Potatoes, zucchini, whatnot.
Simmer until the chicken and veggies are the consitency you want. In the meantime, take some quality fresh corn tortillas, and cut 'em into long strips. Briefly fry them in some veggie oil, in small batches. Drain them on some paper towels, and salt them.
Dice up some cilantro (coriander leaf), fresh tomatoes, and avocado. Cut up a good pile of lime wedges. Check the soup for seasoning, add the cilantro and tomatoes, and simmer for a few minutes longer, not allowing the cilantro to turn canned-pea green. She's ready! Now you can condimentalize with liberal dosings of lime-wedge-juice, avocado dice, and tortilla strips. Hell, save some of the diced tomato and throw that on there too. Make sure your beer is cold and enjoy.

Sounds awful but reminds me of an odd marinade. It was some halfway-decent Chinese joint in Carbondale, IL. They medallioned chicken breasts and marinated them overnight in yogurt. Fantastic, like chicken silk. Throw away the yogurt, though. Imagine the bacterial war going on in that mess.

I have some people from south of the border that work for me. Their wives make me chilaquiles often. That shit is the best.

I've always heard and (found somewhat) that you shouldn't marinade with BBQ sauce because if BBQ sauce is applied to soon when grilling the sugar/molasses, etc. in the BBQ sauce will burn away.
Have you tried putting the bbq sauce at the end but marinading with the rest?

This may not be much help since you've got whole chicken breasts but I make my (in)famous "taco bake" with ground chicken breast, a packet of reduced sodium Old El Paso taco seasoning, a (15 oz.) can of black beans, about a cup of frozen corn kernels, all mixed together with some reduced fat "Mexican blend" cheese and layered between whole-wheat fajita size tortillas. (Incidentally, this is one of Matt's favorite dishes. Even though I'm still tweaking it.)
I also made tequila-lime chicken tenders the other night (juice of 4 limes, zest of 1/2 lime, double-shot of tequila, 3 cloves of garlic & about 1 Tbsp. of chopped cilantro, salt & pepper; marinate for 20-30 minutes & cook as desired...I used a grill pan) ... which I turned into enchiladas a couple nights later.
(Again, this is probably no help, and I really do like the looks of jauble's recipe!)

I have not, but I will definitely try that. thanks for teh tip. ir does burn up pretty quick, but i like that crispy bbq parts on chicken

2 dried red chiles (seed them unless you want a show) cut into tiny peices
1 dried chipotle pepper seeded and cut into small strips
2 tbsp olive oil
a bit of honey (tbsp plus a little more)
juice from one lime (and if you like grate the lime skin and put it in....its worth it)
2-3 cloves of garlic chop them up but they dont have to be goodfellas thin.(I cannot remind people more that a clove is the thing you pull off the bulb not the bulb itself...disasters have been had)
about a tbsp of chopped cilantro and thyme are always good and go fresh...its better that way
Baste the chicken every time you turn it and enjoy.
Edit: if you want less sweet just do one tbsp of honey

With what you are doing I would double (well 1.5) the sauce throw it in a ziploc put it and the chicken in reserving about a quarter for basting while grilling. Do this about 3-6 hours before grilling. Best of luck.

One thing you also can use with grilled chicken is a honey/sauce glaze that we got from a cookbook for pork chops. It works just as well for chicken.
Basically for 4-6 breasts, you use 1/2 cup honey, 1/4 soy sauce, pinch of red pepper flakes and pepper. Mix together, and set some aside for the dinner table.
Grill one side of the chicken until done, and then flip. You then apply the glaze to the cooked side of the chicken until it's done.
