We all know AB is a genius. But im curious if anyone on here has tried his recipes. I know some seem......difficult, like when he made a smoker out of ceramic plant potters. But I think most of his stuff is easy to make. I made his Pot Stickers once and they turned out great. I even made some for a party and I was the talk of it b/c of how good they were.

One of my favorite dishes is his mac and cheese with the Panko bread crumbs.

I also want to make pocket pies.

He makes everything look so easy... and quick. It would probably take me a good half hour to prepare all the ingredients.

I haven't tried any of his recipes but I do take heed to his tips, like, on how to buy produce or what cuts of meats to use for what recipes. I also like his ideas about mult-taskers!

I have made his...

Blueberry Muffins
Chocolate Lava Muffins
Waffles
Pancakes
Chocolate Chip Cookies
Crab Cakes
Crab Fritters
Garlicky Greens....


But by far the best recipe of his I've used is his ham recipe. Every Christmas and Easter I make a big 'ol ham on the bone with a crust made of brown mustard, brown sugar, crushed ginger snaps, and bourbon. Holy Christ on a pony is it good.


Some of his stuff is complicated, but honestly the majority of his recipes are very simple, because he is a fan of letting the true flavor of the ingredient come out. His crab cake recipe has three ingredients, and it's fantastic.

My sister and her husband make a lot of his recipes around the holidays and when we are on all on the family vacation, they tend to tackle the more complicated recipes. I have made his Monkey Bread and the Mac & Cheese w/ panko bread crumbs. We also have used his ice cream recipe and it's awesome if you have an ice cream maker. There are not a lot of the cooking shows on Food Network that I really like but I enjoy his show because he breaks down the what and why of the food.

EXACTLY! I was never into science but his show made me understand why, say, I shouldn't over-knead bread. My home ec teachers failed in comparison. I've learned so much from AB's show!

I do this every year too. It is so good and so tender. I always add more ginger snaps though because the rub tends to be a bit sticky.

I hate Alton Brown, I call him a condescending creep

but he sure can cook, my wife has cooked quite few of his recipes

More than his recipes, I have learned a lot about food from him. Two examples come to mind:

1) Searing meat does not lock in juices in any way but it does create a very tasty crust.

2) You can wash mushrooms under water because they don't really absorb much.

Why is he condescending? Too many big words?

Believe it or not, I think I found that. I was able to pull this quote from Alton's website....

i love alton's thoughts on food, but he comes across as a smug prick, sort of like a keith olbermann of the kitchen. i don't like him at all.

I'm a big Alton Brown Fan, I don't find him to be condescending at all. My girl did, but then after watching many episodes of Good Eats she saw that a lot of the time he calls himself out on his quirks and food knowledge.

I've made his recipes for Swedish Meatballs and Hummus. Mostly I use his techniques for stuff I already make.

Alton's the best. I find that I don't really use his recipes per se. I adapt them to what I'm cooking and use what I've learned from the show to make things better.

The problem with some AB recipes are sifting through which ones are legit, and which ones are exlusively just to build a show around. For example, on his wings show his method was insane and we were able to get the intended results (crispy skin, smokeless cooking) in a fraction of the time using more traditional means. But in my house AB is the go to search for recipes, but we generally always refine them to our own preferances, which I guess is how cooking should be.

I agree, FoA is kindof unbearable, especially he Mississippi one- it seemed like a ton of 'something will happen when we get there' but nothing happened and they had to cobble together a show out of that.
