I have a pork tenderloin in the fridge that I want to cook up for dinner. Anyone have any recipe/preparation sugestions?

INGREDIENTS

* 1 (1 1/2 pound) fat-trimmed pork tenderloin
* salt and pepper to taste
* all-purpose flour for dusting
* 2 tablespoons vegetable oil
* 1 (8 ounce) bottle Russian-style salad dressing
* 3/4 cup honey
* 1 (1 ounce) envelope dry onion soup mix



DIRECTIONS

1. Preheat oven to 350 degrees F
2. Trim any excess fat from pork and pat dry with a paper towel. Season with salt and pepper. Dust with flour, shaking off any excess.
3. In a large skillet, heat 1 to 2 tablespoons of vegetable oil over medium-high heat. Sear the pork in the oil, rotating to brown evenly all sides. Transfer to a baking dish just large enough to fit the tenderloin.
4. In a bowl, stir together the Russian-style salad dressing, honey, and onion soup mix. Pour evenly over the tenderloin, rolling the meat to coat on all sides. Cover with aluminum foil.
5. Bake, covered, in the preheated oven for 30 minutes, basting with glaze every 10 minutes. Remove foil and continue baking another 30 minutes, or until pork is no longer pink in the center.

for today maybe a Spice Rub or a Pepper and Garlic Dry Rub

for tomorrow Marinate the fuck out of that pig, I'm partial to a Garlic Terriyaki,

If you are close to Balducci's or a high end market, they have some really good marinades, will cut down on the work needed

Make a sauce of boiled and cruched ancho chili's. Add ketchup, worcestershire, garlic, salt and pepper. Mix well, coat that bad boy well.

Slow roast on the grill. Low flame, after the outside is seared move to the upper level.

Prepare salad,mashed potatos and corn on the cob. A nice bottle of Cabernet will finish it off.

Roast Pork Loin with Mushrooms and Tomatoes

1 pound plum tomatoes, cut into thick wedges
1 pound small button mushrooms, stems trimmed
5 cloves garlic, halved
1 tablespoon olive oil
Coarse salt and ground pepper
1 (2 1/4 pound) boneless pork loin
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon dried oregano

Preheat oven to 425 degrees F. In a 9-by-13-inch baking pan, combine tomatoes, mushrooms, garlic, and oil; season with salt and pepper. Toss to coat, and move mixture to sides of pan (leaving center free).
Sprinkle pork with 1 teaspoon salt, 1/2 teaspoon pepper, cumin, coriander, and oregano, rubbing mixture in. Place pork in center of pan.
Roast until meat registers 160 degrees F on an instant-read thermometer and mushrooms are tender, 45 to 50 minutes. Remove from oven.
Cut off a third (10 ounces) of the pork loin, and set aside for making pressed pork sandwiches. Slice remaining pork, and serve with tomatoes, mushrooms, and any pan juices.

Some minced garlic, course ground black pepper, hot paprika, lil salt and some crushed red pepper rubbed on...heat the right side of your grill and put some hickory chips on aluminum foil on the grill over the active burner...put the tenderloin on the grill on the opposite side of the grill and smoke that shit for an hour or until the internal temperature of the meat is 170 degrees. You might even sear the tenderloin over direct heat for a minute to achieve the much desired grill marks.

Marinade at least overnight - I love the lemonade marinade - can be done with pork chops or roast.

Strawberries and avocado salsa with a roast is delicious when everything's cut up, fresh, ripe and just out of the fridge..
Pork Tenderloin with Strawberry Avocado Salsa
2 tbsp minced chipotle chilies, canned in adobo sauce
2 tbps fresh lime juice
3/4 cup sliced onion
2 garlic cloves, crushed
1 1/2 pounds pork tenderloin, trimmed if necessary
1/2 tsp salt
Cooking spray


For the salsa:
1 quart fresh strawberries, rinsed, hulled and quartered
2/3 cup peeled and chopped avocado<about 1/2 large>
2 tbsp thinly sliced scallions
2 tbsp chopped fresh cilantro
2 tbsp fresh lime juice
1/4 tsp salt

To prepare pork, in large zip close plastic bag combine chipotle chilies, lime juice, onion and garlic. Add pork then seal and marinate in refrigerator for 2 hours, turning bag occasionally. When ready to cook, preheat gas grill to high or prepare a charcoal fire. Lightly coat grill rack wiht cooking spray. Remove pork from bag and discard marinade. Sprinkle pork evenly with salt. Place pork on rack and grill over indirect heat, Turning occasionally, for 20 minutes, or until thermometer inserted in center of pork registers 155 f. Inside should be slightly pink. Remove meat from heat and let stand 10 minutes. Slice crosswise. To prepare salsa, in medium bowl, combine strawberries, avocado, scallions, cilantro, lime juice and salt. Toss gently. Serve immeditaley with sliced pork.

Season it like everyone says...Then make a sauce with 1 cup ketchup 1 cup mustard and 1 cup brown sugar....Bring to low heat..Then get some Chili flavored Frito corn chips..pour sauce over the meat then crunch chips and sprinkle over... Your lil kids will love it....Have you guys missed me...Oh never mind...Juggy:smile:
