Is It Plain or Cheese?

I raised this question on the listening thread, but I wanted to get a larger sense of what people think.

When you order pizza that only has cheese and sauce on it, do you call it a cheese pizza/pie or a plain pizza/pie?

I see the logic for the latter, but after living in NYC for 13 years, I call it cheese pizza/pie, and plain sounds weird or wrong.

First, I've never said "pie with just cheese." I say "[size] cheese pie/pizza/slice." So it's not easier to say "plain" since both just require one word.

And I've never had anyone ask me "extra cheese" when I say that I'm ordering a medium cheese pie. And I've ordered it this way when I lived in New Haven, New York, and now up near Hartford.

I just read the Wikipedia article for Sally's (http://en.wikipedia.org/wiki/Sally's_Apizza)in New Haven. It has this entry:

Now I know this is Wikipedia so we can't say for certain this is accurate, but I do know that Pepe's (http://www.pepespizzeria.com/menus.html), another great New Haven pizza place, has a tomato pizza, which is the "original", and a different pizza that is the "orginal tomato pie with mozzarella." All of their other pizzas come as a certain topping (such as clams), or the topping with mozzarella.

Maybe this is where I got this habit.

Not true. Pizza comes from Italy where they do serve pizza, Neopolitan pizza marinara, which is served without mozzarella cheese. And there is a Verace Pizza Napoletana Association that recognizes that as one of the three official types of Neopolitan Pizza.

It's wrong because you can't have an omelette without eggs. No one does that. But it's clear that you can have a pizza without cheese, rare that it may be in America.

I mentioned Neopolitan pizza for two reasons. The first was because I think that the influences of these places on where I went to college may have created this habit. I mentinoed it again, because your omelette analogy essentially defines pizza as requiring cheese. I never defined pizza that way, and so when you did, I had to counter.

But let me clarify further. I'm not saying that the correct way to order pizza is to say "cheese" rather than "plain." I've acknowledged that there is a logic to saying "plain" that I can't deny. My Neopolitan pizza points were to show that calling it "cheese" has a history to it as well, and doesn't render one saying it to be a hayseed, unsophisticated, etc.

In the hinterland (anything west of Adams Morgan, DC) they call it "cheese." This term is incorrect, but the people in this part of the country are dumb hayseeds.

The reason for this is that cheese is implied, as are sauce and crust. Would you ask for the slice by one of the other main ingredients? Of course not.

I sent this menu to everyone I know when I found it! God do you know how many days and nights I long for a Verdolini's pizza of any kind? How I wish I got the secret of the sauce out of Vic over a drink at Daniells or why didn't one of the the kids like Gary didn't keep the place going???? GOd how I long for the sauce the sausage the smell of the place...the crust. No one did it like them! I live in FLorida now and used to be friends with the Verdolini's through my X husband and then on my own with Vic....god how nice to now find you! I joined this just to write to you! Feel special lolololo. Well just wanted to let the world know how wonderful the world of your pie was!:clap:

Thanks for the nice post! I miss the place too. My Uncle Vic's kids had "issues" shall we say but the flood in 1992 really damaged the place and marked its demise. It's too bad -- it was a goldmine really. I wish I could have kept it going.

You probably saw my grandmother Mary working behind the counter. She makes the closest version of a Verdolini's pizza these days.
