I still have my knives from when I was in the culinary business. My first set were Henckels. Then a few years down the road my bossman gave me a full 12 piece set of BergHOFF's as a gift. I've since retired from the kitchen but still use them at home.

Henckels are the best. I have the 5 star. Solid piece of metal that does not bend - perfectly weighed. Those carrots actually scream when they see that blade coming down on em.

I have a set of wusthoff's. The one quality thing I have in my kitchen, other than scotch. Knives are the one cooking tool that needs to be quality.

High on my birthday list this year is an incredible set of knives. The ones I have now are the best I've ever had though they are not any well known brand, and I know cooking will be even more rewarding if I had some amazing knives.

Hopefully my family will come through!

If you want really good knives, you have to get professional ones. The ones they call 'professional' in the Department stores cost way too much (sometimes more) and aren't that great. You don't need alot either, 4 or 5 knives should do everything you need to do. One really good set of knives will last you a lifetime, if you have a terminal . . . nah, just kidding. Seriously, you can get some good, professional stuff in Manhattan on the Bowery where all the restaurant suppliers are. 'CHEF" is pretty good on the corner of Houston. If you want the same exact stuff for 1/3 less, walk around Chinatown.
