my favorite: Ezekial bread, Cabot's garlic cheddar, with jalapenos
I also really like the original like m'daddy makes... white bread with white American cheese

The Happy Waitress Deluxe at my local Diner is Open Faced Grilled Cheese with tomato and Bacon, Cheese fries on the side. Best late night drunk order.
I think I know where I am going for Dinner tonight.

I like Rice Slice American cheese flavor
i do use Soy Kaas for pizza because in the oven it melts wonderfully. In a pan its a different story.
I use another cheese that I cant think of the name of off the top of my head but it is the Produce section of the supermarket not the cheese section.

Planning my Grilled Cheese Celebratory Platter menu for tonight and thought I'd run it past you all here:
1) Classic white bread with white American cheese
2) Hearty Ezekial bread with garlic cheddar and green frying peppers (my personal fave)
3) Rye bread with sweet vidalia onions and swiss cheese
4) Wheat bread with provolone, tomato, and bacon
any ideas for a 5th?

Alton Brown's method produced a deligtful sandwich:
Butter one side, spray olive oil on the other.
Shredded cheese inside, spread dijon mustard on the FLIP of the olive oil side.
heat two frying pans. small pan gets HIGH heat, big pan gets medium.
Put sandwich butter side DOWN in big pan. lay a sheet of aluminium foil, then apply small pan on top.
Cook 3 minutes.
Flip and cook olive oil side for 1 minute.

i also like to stick a slice or 2 of cheese and a slice of tomato and toast it on a slice of bread. yummy stuff.

For lunch I made one with yellow American, cheddar, and some fresh mozzarella on rye bread and cooked it in butter. It was awesome.

It's amazing what you learn to cook perfectly when you have a kid. Pre-kid I couldn't make a good grilled cheese to save my life. Now I make great grilled cheeses without having to think--gooey melted cheese, buttered bread grilled to a nice light brown and that great crisp crunch on the first bite. Yum!

Yes, thank you Mike! My grilled cheese party was a success... my lesbian friends happen to LOVE grilled cheese. I made 4 varieties... served with lots 'o beer, potato chips, and one of them even brought pickles! Classic grilled cheese goodness! Good grilled cheese times!
