Almost. White Chocolate is Sugar, Cocoa butter, Milk solids and vanilla.

Milk Chocolate will be Sugar, Cocoa butter, Chocolate Liquor, Milk solids and vanilla

Dark chocolate is Chocolate liquor (not alcohol, thats what they call the stuff that comes out of ) with Sugar, Cocoa butter and Vanilla. Usually no milk solids.


All you're really doing is changing the ratios between the 5 ingredients, in some cases eliminating one. I have no problem calling White Chocolate "chocolate", unless they don't use cocoa butter. Cocoa butter has different melting points (very unique for a fat), which is one of the things that gives chocolate its texture and complexity. If they use cocoa butter it has the same mouthfeel as other chocolates.

I fucking love dark chocolate. Having a piece of good dark is one of the few things in life that make me giddy. I don't eat chocolate that often though cause once I start it is very hard to stop. Dark chocolate for the same reason I like my coffee dark. Bitter tastes really good to me. One chocolate company that makes some interesting kinds is Dagoba. I didn't like the dark chocolate and red chilis one, but really liked the dark chocolate and lavender one and mint and rosemary one.
