i never call it gravy. i just always call it sauce. any other kind of sauce has the "type" in front of it like teriyaki sauce, soy sauce, steak sauce, etc. i won't call it meat sauce unless that actually has like a whole pound of ground beef mixed into it & no meatballs or any other kind of meat.

Heat up a large pot with a dash of olive oil.
Brown the ground meat (Beef pork veal) and sausij. Sprinkle with salt and garlic powder.
Remove the meat and put on a paper towel to absorb some of the fat.
Add a little more olive oil, and sauté' your chopped onions and garlic. (use the same pot with a little bit of the meat goodness still in it)
Add 2 cans of crushed tomatos, 2 cans of paste, 1 tablespoon of Italian bread crumbs, 1 glass of GOOD red wine, oregano, basil, garlic powder, salt, a bay leaf. Bring to a low boil.
Add the meat back into the pot. Bring back to a low boil.
Cover, and simmer for many hours. Stirring occasionally. The long cooking at a low heat breaks down the tomatos and brings out a bit of sweetness. No need to add sugar.
I guarantee this recipe!

my Nana (wifey's eye talian side) makes the best red sauce I ever had, I can get a recipe, but she is one of "those" who purposely give less ingredients to make theirs look better

here's and easy and quick one...
8 medium tomatoes, quartered
1 shallot, peeled and quartered
garlic
1/4 cup fresh basil
pinch of dried thyme leaves
pinch of salt
pinch of pepper
pinch of sugar
In a food processor, puree tomatoes, shallot, and basil until smooth. Saute garlic in olive oil. Transfer puree to a large skillet. Add thyme, salt, garlic, pepper, and sugar. Bring to a boil and cook over med. heat for like 15 minutes, stirring occasionally.

If you are not luck enough to have a momma that still boils, churns, and jars her own tomatos, get a few cans of the tutto rossa tomatos, throw those in a pot that has olive oil and garlic in there... a little salt... and that is all you really need man. keep it simple. then you good up some beef ribs, and meatball in there, and you are set. simple and easy.. and say no to sugar... jsut my opinion.. this si coming from a guy whose parents were born in the old country
